1 package (17-1/2 ounces) sugar cookie mix
4 large eggs, room temperature, divided use
1/2 teaspoon ground cinnamon
1 ounce semisweet chocolate, chopped
1-1/2 cups packed brown sugar
2 tablespoons bourbon
1 teaspoon vanilla extract
1 cup coarsely chopped pecans
3/4 cup packed brown sugar
6 tablespoons butter, cubed
1/2 cup heavy whipping cream
1/2 cup heavy whipping cream
1 tablespoon confectioners' sugar
1 tablespoon baking cocoa

Steps:

  • Preheat oven to 350°. In a microwave, melt 1/2 cup butter in a large microwave-safe bowl. Stir in cookie mix, 1 egg and cinnamon. Spread into a greased 13x9-in. baking pan. 1/2 cup miniature semisweet chocolate chips

1 (9 inch) unbaked pie crust
⅓ cup butter
⅔ cup white sugar
3 eggs
¼ teaspoon salt
1 cup light corn syrup
1 teaspoon instant coffee powder
1 cup chopped pecans
1 cup semisweet chocolate chips
½ cup heavy cream
¼ teaspoon vanilla extract
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) In a medium saucepan, melt the butter over low heat. Stir in sugar, and set aside to cool.
  • In a mixing bowl, beat eggs well. Stir in salt, corn syrup and melted butter mixture. Add coffee powder mixed with 1 teaspoon water, if desired. Stir in the chopped pecans.
  • Spread chocolate chips evenly over the bottom of the pie crust. Pour pecan mixture over the crust.
  • Bake at 375 degrees F (190 degrees C) for 45 to 50 minutes, or until set. Cover and let stand at room temperature about 8 hours before serving. Pie will be soft.
  • Combine cream, confectioners' sugar, and vanilla in a small mixing bowl. Whip until stiff. Garnish pie.

1/4 cup butter, softened
1 egg, slightly beaten
3 eggs
3/4 cup packed brown sugar
3/4 cup dark corn syrup
2 teaspoons vanilla
1 1/4 cups coarsely chopped pecans

Steps:

  • Set oven to 350 degrees.
  • Grease a 13" x 9" baking pan.
  • Set aside 1 cup of cake mix for the filling.
  • For the crust: In a large mixing bowl, combine the remaining cake mix, butter, and slightly beaten egg.
  • Stir with a fork until crumbly.
  • Transfer into prepared pan.
  • With lightly floured hands, press lightly and evenly into bottom of pan to form a crust (don't pack crust down to hard).

1 cup sugar
2 tablespoons margarine
4 (1 ounce) squares semisweet chocolate
1 teaspoon vanilla
1 1/2 cups pecan halves
1 unbaked 9-inch pie shell

Steps:

  • Preheat oven to 350 degrees.
  • Melt margarine with chocolate squares.
  • In a large bowl, stir together eggs, corn syrup, sugar, chocolate mixture, and vanilla until well blended. Stir in pecans. Pour into pie shell.
