EASY CHICKEN LUAU

My friend served this at her son's birthday party and I immediately asked for the recipe. She gave it to me verbally and I was surprised by how simple it was! I had to post it so I wouldn't forget about it, since I don't have it on paper. Hope you enjoy! Everyone at the party loved it. Taro leaves are traditional in this recipe, but my friend made it with spinach and it was still delicious.

This recipe was originally called "Chicken Delight" and came from my mother. I don't know where she got it from. I re-named it "Luau Chicken" for use at a Hawaiian themed party.

CHICKEN LUAU

This modern version of a Hawaiian recipe combines chicken with spinach and coconut milk. A more traditional recipe for this dish would use taro leaves instead of spinach, and additional cooking time. You may also try making this recipe with two teaspoons fresh ginger, sliced, in place of the garlic, or in addition to the garlic. Taken from a Hawaiian tourist web site.

HAWAIIAN CHICKEN LUAU

Provided by ediekamioka

Categories     Chicken Breast

Time 55m

Yield 5 serving(s)

Number Of Ingredients 6

2 lbs chicken breasts (skinless/boneless)
2 tablespoons macadamia nut oil
2 teaspoons minced garlic
4 cups chicken stock
3 (10 ounce) packages whole frozen spinach, thawed
1 1/2 cups coconut milk

Steps:

  • Cut chicken into 1 inch cubes. Heat oil in a large skillet and saute chicken and garlic until light brown. Add stock, cover and simmer for 10 mins or until tender. Drain spinach and stir spinach and coconut milk into skillet.
  • Simmer for 5 minutes and serve.

Tips:

  • Choose the right chicken: Boneless, skinless chicken breasts or thighs are best for this recipe, as they cook quickly and evenly. If you're using bone-in chicken, you'll need to increase the cooking time.
  • Use fresh vegetables: Fresh vegetables will give your luau a more vibrant flavor. If you don't have fresh vegetables on hand, you can use frozen vegetables, but be sure to thaw them before using.
  • Don't overcook the chicken: Overcooked chicken is tough and dry. Cook the chicken until it is just cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Use a variety of colors: A variety of colors will make your luau more visually appealing. Use a mix of green, red, orange, and yellow vegetables.
  • Serve with rice: Rice is a traditional side dish for luau. It's a great way to soak up all the delicious sauce from the chicken and vegetables.

Conclusion:

Easy Chicken Luau is a delicious and easy-to-make dish that's perfect for a weeknight meal or a casual gathering. It's also a great way to use up leftover chicken. With a few simple ingredients and a little bit of time, you can create a flavorful and satisfying meal that the whole family will enjoy.
