Steps:
- Remove and discard excess fat from chicken. In 4-quart Dutch oven, place chicken, giblets (except discard liver) and neck. Add celery, carrot, onion, parsley, salt, pepper and water. Cover; heat to boiling; reduce heat. Simmer about 2 hours or until juice of chicken is clear when thickest part is cut to bone (at least 165°F).
- Remove chicken and vegetables from Dutch oven. Discard giblets and neck. Skim 1/2 cup fat from broth; reserve. Transfer broth to large bowl; reserve 4 cups (reserve remaining broth for another use).
- In Dutch oven, heat reserved 1/2 cup fat over low heat. Stir in 1/2 cup of the Bisquick™ mix. Cook and stir until mixture is smooth and bubbly; remove from heat. Stir in reserved 4 cups broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Add chicken and vegetables; reduce heat to low. Heat about 20 minutes or until hot.
- In medium bowl, stir remaining 2 cups Bisquick™ mix and the milk with wire whisk or fork until soft dough forms. Drop dough by spoonfuls onto hot chicken mixture (do not drop directly into liquid). Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.

Tips:
- Use a good quality chicken broth. The flavor of the broth will come through in the dumplings, so it's important to use a broth that you like the taste of. If you don't have any homemade chicken broth on hand, you can use a store-bought broth. Just be sure to choose a low-sodium broth, so that the dumplings don't end up too salty.
- Don't overmix the dumpling dough. Overmixing will make the dumplings tough. Just mix the dough until it comes together, then stop. The dumplings should be slightly sticky, but not so sticky that they're difficult to handle.
- Drop the dumplings into the boiling broth. If you add the dumplings to the broth before it's boiling, they'll sink to the bottom and stick to the pot. Dropping them into the boiling broth will help them to cook evenly and prevent them from sticking.
- Cook the dumplings until they're cooked through. The dumplings are done cooking when they float to the top of the broth and are no longer doughy in the center. This usually takes about 10-12 minutes.
- Serve the chicken and dumplings immediately. Chicken and dumplings are best served hot, so they should be served immediately after they're cooked. You can garnish the dumplings with fresh parsley or chives, if desired.
Conclusion:
Chicken and dumplings is a classic comfort food that's easy to make and always a hit with the family. With a few simple ingredients and a little bit of time, you can make a delicious pot of chicken and dumplings that everyone will love. So next time you're looking for a hearty and satisfying meal, give this recipe a try.
