½ Onion chopped
3 Tbsp. Taco seasoning
¼ C. Water
2 C. Enchilada sauce
3 C. Cheddar cheese shredded
10-14 Soft corn tortillas warmed up
Sour cream and chopped cilantro for garnish

Steps:

  • Preheat the oven to 350 degrees.
  • Add the ground beef and onion to a skillet over medium high heat. Saute until the meat is cooked through and the onion is softened. Drain any excess grease.
  • Reduce the heat to medium and stir in the water and taco seasoning. Saute another 5 minutes.
  • Layer ½ of the enchilada sauce in the bottom of a 9x13 baking dish.

1 (1 1/4 ounce) packet taco seasoning
12 large flour tortillas
1 (16 ounce) can refried beans
1 (11 ounce) can canned corn niblets
cheddar cheese or colby-monterey jack cheese
2 (10 ounce) cans red enchilada sauce
olive (optional)
salsa (optional)
cilantro (optional)
green onion (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Cook the ground beef in a skillet until brown.

1 (11 ounce) can Campbell's nacho cheese soup
1/2 cup milk
1 lb ground beef or 2 cups cooked chicken
1/2 cup salsa

  • Brown ground beef and drain fat. In seperate bowl mix soup with milk. To cooked beef add salsa, chili powder, and add 3 - 4 tablespoons of cheese soup.
