CHEESY BREADS
Of all the different appetizers I've made over the years, this one is always the first to go and it is SUPER easy to make. You can use either sweet or sour dough bread, both are tasty! I will usually assemble the Cheesy Breads the morning of the party on cookie sheets and cover with plastic wrap and keep in the fridge. When everyone has arrived at the party I just pop them in the oven and serve them piping hot! If you don't want the bread to be crunchy, broil them instead of baking them. I've tried them both ways and crunchy is better!

FOUR-CHEESE FLATBREADS
You can make personal pizzas quickly by using premade naan, flatbread or pita as the base, then topping with whatever sounds good to you. Here, the combination of feta, Parmesan, ricotta and mozzarella hits every note - salty, creamy, tangy and gooey. Corn's sweetness balances the savoriness, and a generous amount of black pepper cuts through the richness, as it does in cacio e pepe. Feel free to swap the cheeses based on what you have - pecorino instead of Parmesan, fontina instead of mozzarella - and incorporate any toppings you like: spinach, herbs, garlic, red-pepper flakes, hot honey and so on.

Tips:
- When working with yeast, make sure it is active and fresh. If the yeast is old or inactive, it may not work properly and your flatbread will not rise. - To check if the yeast is active, mix it with warm water and a little sugar. Let it sit for 5-10 minutes. If the yeast is active, it will foam up and bubble. - If you don't have time to let the dough rise, you can use a quick-rise yeast. This type of yeast can be added directly to the dough without needing to be activated first. - If you are using a pizza stone, preheat it in the oven before baking the flatbread. This will help the flatbread to cook evenly and give it a crispy crust. - If you don't have a pizza stone, you can bake the flatbread on a greased baking sheet. - Watch the flatbread carefully while it is baking. It can burn quickly, so it is important to remove it from the oven as soon as it is cooked through. Conclusion:
These cheesy flatbreads are a delicious and easy-to-make snack or meal. They are perfect for parties, potlucks, or a quick weeknight dinner. With a variety of toppings to choose from, there is sure to be a flatbread that everyone will enjoy. So next time you are looking for a quick and easy recipe, give these cheesy flatbreads a try.
