This is an easy baked eggs recipe from my Grandpa Douglas' mother, Marguerite. We made this the other day and it was fabulous! This would be a 6 out of 5 if possible to rate it that.

1 (8 ounce) package shredded sharp Cheddar cheese, divided
½ cup heavy cream
½ teaspoon dry mustard
½ teaspoon salt
½ teaspoon paprika
10 large eggs

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8-inch pan.
  • Cover the bottom of the prepared pan with 1/2 of the sharp Cheddar cheese.
  • Mix together heavy cream, dry mustard, salt, and paprika in a bowl. Pour 1/2 of the mixture over the cheese in the prepared pan.
  • Break eggs over the top, making sure not to break yolks. Cover with remaining cream mixture and top with remaining sharp Cheddar cheese.
  • Bake in the preheated oven until eggs are set, about 20 minutes. Serve immediately.

1 ½ cups shredded sharp Cheddar cheese
2 ¼ teaspoons seasoned salt
2 teaspoons hot pepper sauce (such as Tabasco®)

4 tablespoons unsalted butter, at room temperature
3 cups chopped mustard greens
1 clove garlic, minced
Kosher salt and freshly ground black pepper
12 large eggs, lightly beaten
1/2 cup milk
1/2 cup baking mix, preferably Bisquick
2 cups grated sharp yellow Cheddar
2 cups grated Monterey Jack cheese
2 cups frozen hash browns

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish with 1 tablespoon softened butter.
  • Melt the remaining 3 tablespoons butter in a skillet over medium heat. Add the mustard greens, garlic and a pinch of salt and pepper and saute just until wilted, 2 to 3 minutes. Remove from the heat and cool slightly.
  • Whisk together the eggs, milk, baking mix, 1/2 teaspoon salt and some pepper in a bowl until well incorporated. Stir in the mustard greens, cheeses and hash browns. Pour into the greased baking dish. Bake until puffed lightly, golden brown and soft-set in the middle, 45 to 50 minutes. Cool slightly before slicing and serving warm.

1/4 cup butter
12 eggs
1 cup milk
1/2 cup shredded cheese (I used colby jack)
1 teaspoon Salt (plus some extra)
1 teaspoon Pepper (plus some extra)

Steps:

  • Preheat oven to 350 degrees
  • While preheating, place a 9×13 glass baking dish with the butter in it in the oven.
  • In the mean time, whisk eggs with milk.
  • Add cheese, 1 teaspoon salt, and 1 teaspoon pepper.
  • Remove the pan with the butter from the oven.
  • Pour egg mixture on top. Bake for 10 minutes.
  • If you want true scrambled eggs, break up with a spatula after 10 minutes. Repeat this process every 5 minutes until eggs are completely cooked.
  • If you want to slice your eggs, check every 10 minutes and remove when eggs seem set.

225ml bag baby leaf spinach
6 large eggs
425ml milk
1 tbsp English mustard powder
200g bread (about 3 thick slices)
200g mature vegetarian cheddar
4 clusters of cherry tomatoes on the vine

Steps:

  • Preheat the oven to 190C/gas 5/fan 170C and butter a shallow 2-litre dish. Tip the spinach into a colander in the sink and pour a kettleful of boiling water over it. Leave it to wilt while you make the cheesy base. (Or microwave the spinach according to the packet instructions.)
  • Break the eggs into the bowl of a food processor, pour in the milk, add the mustard and 1 tsp salt. Tear in the bread, crusts and all, then whizz together until smooth. Tip the mixture into a large bowl and grate in three-quarters of the cheese.
  • Squeeze the spinach, to get rid of all the water, then stir it into the cheese mixture and tip into the dish. Grate over the remaining cheese, top with the tomato clusters and bake for 30-35 minutes until risen and golden. Cool and allow to settle a little before serving.
