This is habit-forming, it is soooo good and so simple to make, you can also use unskinned almonds or use whatever nut you desire --- you may also add 1/3 cup molasses for a stronger caramel flavor :)

24 cups popped corn (1 cup unpopped)
1 cup butter or 1 cup margarine
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons vanilla
1 1/2 cups whole peanuts (or use both) or 1 1/2 cups unsalted walnut halves (or use both)

Steps:

  • Set oven to 250 degrees F.
  • Put the popped corn in a large bowl.
  • Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
  • Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
  • Remove from heat and stir in baking soda and vanilla.
  • Add in the nuts and stir to combine.
  • Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
  • Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
  • Remove from oven then cool.
  • Break into pieces.
  • Store in a tightly covered tin box.
  • Delicious!

1 cup brown sugar
⅔ cup sweetened condensed milk
½ cup corn syrup
¼ cup butter

Steps:

  • Pour popcorn into a large bowl.

1 (14 ounce) bag Kraft caramels
3 tablespoons butter or 3 tablespoons margarine
2 tablespoons water
12 cups air- popped popcorn
1 cup cocktail peanuts
4 (1 ounce) baker's semi-sweet chocolate baking squares, finely chopped

Steps:

  • Preheat oven to 300°F.
  • Place the caramels, butter, and water in a heavy saucepan. Cook on low heat until the caramels are completely melted, stirring frequently.
  • Combine the popcorn and peanuts in a large bowl. Make sure to remove all unpopped kernels. Drizzle with the caramel mixture; toss to evenly coat. Spread onto a large greased baking sheet.

1/2 cup margarine

1 brown paper bag

I started making this a few years ago right around halloween. I've made it the more "complicated" way, but always come back to the ease of preparation in this recipe.

1 pkg microwave popcorn, popped (10 cups)
1/3 c butter, unsalted
2/3 c brown sugar, packed
1/3 c light corn syrup
1/4 tsp baking soda
1/2 tsp vanilla extract

Steps:

  • 1. Place popcorn in a large microwave-safe glass bowl, set aside.
  • 2. In another glass bowl, microwave the butter until melted, about 45 seconds. Stir in brown sugar and corn syrup. Microwave on high until mixture boils, 1 to 3 minutes, stirring once, then on high for 3 minutes without stirring. Remove bowl and stir in soda and vanilla.
  • 3. Pour the caramel mixture over the popcorn and stir until most of the popcorn is coated. Microwave on 70% power for 1 minute. Remove and stir, then microwave at 70% for 1 more minute. Remove and stir again to coat popcorn evenly. Pour popcorn onto wax paper and cool completely, about ten minutes. Break apart and serve, or store in an airtight container.

  • In large shallow roasting pan, combine popcorn and nuts, if using. Place in 250 degree F oven while preparing glaze. In heavy 2-quart saucepan, stir brown sugar, corn syrup, margarine or butter and salt. Stirring constantly, bring to boil over medium heat. Without stirring, boil 5 minutes. Remove from heat; stir in vanilla and baking soda. Pour over warm popcorn and nuts; stir to coat well. Bake in 250 degree F oven, stirring occasionally, 1 hour. Cool; break apart. Store in tightly covered container.

Tips:
