1/2 cup whole milk
1 1/2 pounds ground turkey
2 large eggs, lightly beaten
1/4 cup grated Parmigiano-Reggiano cheese
8 thin slices pancetta, finely chopped
1/2 onion, finely chopped
3 cloves garlic, chopped
1/4 cup ketchup, plus more for drizzling
1 cup loosely packed flat-leaf parsley leaves, chopped
1/2 teaspoon dried oregano
1/4 cup Italian-seasoned dry breadcrumbs
1/4 teaspoon kosher salt
