These are super easy, and DELICIOUS! I altered the original recipe to add the bell pepper and onion, and I also added more cheese and ham. These are almost like biscuits, but they are great for to-go breakfasts, or just a snack! Very moist too!

Tips:

  • Use ripe bananas: Overripe bananas are sweeter and add more flavor to the muffins.
  • Don't overmix the batter: Overmixing can make the muffins tough. Mix just until the ingredients are combined.
  • Fill the muffin cups about ⅔ full: This will help prevent the muffins from overflowing.
  • Bake the muffins at a high temperature for a short time: This will help the muffins rise and create a crispy crust.
  • Let the muffins cool slightly before serving: This will help them hold their shape.

Conclusion:

These easy breakfast muffins are a delicious and nutritious way to start your day. They are packed with healthy ingredients like bananas, yogurt, and whole wheat flour. They are also a great way to use up ripe bananas. These muffins can be made in a variety of flavors, so you can find one that everyone in your family will enjoy.
