BRAUNSCHWEIGER II
LIVER SAUSAGE AND BRAUNSCHWEIGER These are cured sausages traditionally made from pork liver and pork hearts. Braunschweiger is smoked after cooking, hence the "braun" in the name. They are best stuffed into beef middles as fibrous casings do not shrink with the sausage. This particular recipe is a modified version of the previous and has much better flavor and texture. The main difference is the addition of chicken liver and beef liver. The amounts of the various meats are not critical and just represent the amounts I ended up with and weighed on a gram scale. You can divide by 450 to get pounds. Source: Jack Schmidling Productions, Inc.

Steps:
- Cook liver in simmering water for 10 minutes then chill before grinding.
- Grind all meat through 3/16 plate. Chill in freezer for 30 minute.
- Chop in blender or food processor. This sounds a lot easier than it is as you can only do about half a cup at a time. Commercial sausage kitchens use a machine called a chopper but we have to make due with what we have. The idea is to produce what is known as an emulsion. This process is also required for hot dogs, bologna and other sausages where a homogeneous texture is required.
- Stuff in beef middles.
- Place the sausage in a 165 degree F water for about one hour to internal temp of 152°F.
- Chill in cold water.
- Liver Sausage: Store in fridge for about a day before eating. Keeps for several weeks in fridge.
- Braunschweiger: Dry in smoker at 100F, then smoke for 5 hrs at 120°F.

Steps:
- 1. Into my Large stand mixer I add the braunschweiger and cream cheese, onions, beer and worcestershire sauce. I mix it very well so there are not big clumps of braunschweiger or cream cheese.
- 2. I turn it out onto waxed paper or parchment. I form the ball or make smaller ones for gifts to share, at this point. Using the leftover creamcheese for frosting the balls, them garnish them how ever I think is neat. Use capers, green or black olives, parsley...basically anything savory.
- 3. Place wrapped into the refrigerator for 5 hours to set up!!! You will get loads of compliments and raves for the recipe!!!

Tips:
- Choose high-quality ingredients: The quality of your ingredients will directly impact the flavor of your braunschweiger balls. Use fresh, high-quality meat and spices for the best results.
- Grind the meat finely: The finer the meat is ground, the smoother your braunschweiger balls will be. If you don't have a meat grinder, you can ask your butcher to grind the meat for you.
- Season the meat mixture well: The seasoning is what gives braunschweiger balls their characteristic flavor. Be sure to use a generous amount of salt, pepper, garlic, and onion powder.
- Chill the meat mixture before forming the balls: This will help the balls hold their shape better when they are cooked.
- Cook the braunschweiger balls over medium heat: Cooking the balls over too high heat will cause them to brown too quickly on the outside and remain raw on the inside. Medium heat will allow the balls to cook evenly throughout.
- Serve the braunschweiger balls with your favorite dipping sauce: Braunschweiger balls are traditionally served with mustard or ketchup, but you can also try them with other dipping sauces such as barbecue sauce, honey mustard, or ranch dressing.
Conclusion:
Braunschweiger balls are a delicious and easy-to-make appetizer or snack. They are perfect for parties or potlucks, and they can also be enjoyed as a meal on their own. With a few simple tips, you can make sure your braunschweiger balls turn out perfect every time. So what are you waiting for? Give this recipe a try today!
