Provided by Gav

Categories     Mains

Time 12m

Number Of Ingredients 7

1 shallot, very finely chopped
Knob of butter
125g Roquefort or Gorgonzola blue cheese (or another blue cheese if you prefer)
2 tbsp white wine
100ml double cream
Freshly ground black pepper
Chopped chives

Steps:

  • Melt the butter in the pan and add the chopped shallot. Cook the shallot for about 5 minutes on a low to medium heat, stirring regularly.
  • Then add the white wine and wait until it has reduced (about 1-2 minutes). Then add the blue cheese to the pan and wait until it has all melted before adding the cream.
  • Stir well and heat for about one minute, seasoning with black pepper to suit. You will not need to add any salt, as the cheese is already very salty. Finally, garnish with the chives.
  • Serve up separately, or on top of the steak as required.

BLACKENED STEAK BITES WITH BLUE CHEESE SAUCE

Blackened Steak Bites with Blue Cheese Sauce image

This recipe is similar to an appetizer served at my favorite Italian restaurant. It is a nice change from the usual appetizers and always gets rave reviews! I have used tenderloin in the past, but have found that a good quality top sirloin works very well and is less expensive. Bernaise sauce is a good alternative if you don't like blue cheese.

Time 20m

Yield 8

Number Of Ingredients 9

1 ½ pounds beef top sirloin, trimmed and cut into bite-size pieces
2 tablespoons blackened seasoning (such as Chef Paul Prudhomme's® Blackened Steak Magic®), or more to taste
2 tablespoons vegetable oil
1 (3 ounce) package cream cheese
3 tablespoons evaporated milk
8 ounces blue cheese crumbles
½ teaspoon garlic powder
¼ teaspoon ground white pepper
¼ teaspoon cayenne pepper

Steps:

  • Season sirloin with blackened seasoning to coat on all sides.
  • Heat oil in a cast-iron skillet on an outdoor grill until the oil is smoking. Cook steak bites in hot oil in small batches, reheating oil between batches, until slightly crusty, 1 to 2 minutes per side.
  • Stir cream cheese and evaporated milk together in a saucepan over low heat to melt the cream cheese. Whisk blue cheese crumbles, garlic powder, white pepper, and cayenne pepper into the cream cheese mixture; simmer, stirring frequently, until the blue cheese melts into a smooth sauce, 2 to 3 minutes. Serve blue cheese sauce with the beef bites.

  • Sprinkle the steaks with salt and pepper and smear both sides of the steaks with 1/2 stick of the butter.

Tips:

  • Choose a quality blue cheese: The type of blue cheese you use will greatly affect the flavor of your sauce. Look for a blue cheese that is creamy and flavorful, with a strong but not overpowering aroma.
  • Use a good quality butter: Butter is the base of your sauce, so it's important to use a good quality butter that is unsalted and has a high fat content.
  • Don't overcook the sauce: Blue cheese sauce is best when it is served warm, but not hot. Overcooking the sauce will cause the blue cheese to lose its flavor and become grainy.
  • Serve the sauce immediately: Blue cheese sauce is best when it is served immediately after it is made. The sauce will start to thicken as it cools, so if you need to make it ahead of time, be sure to reheat it gently before serving.

Conclusion:

Blue cheese sauce is a delicious and versatile sauce that can be used on a variety of dishes. It is perfect for steak, chicken, fish, and vegetables. It can also be used as a dip for bread or crackers. If you are looking for a flavorful and easy-to-make sauce, blue cheese sauce is a great option.
