3/4 cup sugar, divided
1/2 cup butter, melted
1/4 cup cold water
1 envelope unflavored gelatin
2 packages (8 ounces each) cream cheese, softened
2 cups heavy whipping cream
2 teaspoons vanilla extract
Mixed fresh berries, optional

Steps:

  • Preheat oven to 350°. Combine cracker crumbs and 1/4 cup sugar with melted butter. Using the bottom of a glass, press cracker mixture onto bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake until set, 12-15 minutes. Cool completely on a wire rack., Meanwhile, sprinkle gelatin over cold water; let stand 5 minutes. Beat cream cheese and remaining sugar until smooth. Slowly beat in cream and vanilla. Microwave gelatin on high until melted, about 10 seconds; beat into cream cheese mixture. Transfer filling to crust. 1/2 cup sugar
3 tablespoons cornstarch
3 tablespoons all-purpose flour
1/2 teaspoon salt
2 cups 2% milk
1 large egg, lightly beaten
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract, optional
1/2 cup heavy whipping cream
1 pastry shell (9 inches), baked
GLAZE:
1/2 cup crushed strawberries
1/2 cup water
1/4 cup sugar
2 teaspoons cornstarch
1-1/2 cups quartered strawberries
1-1/2 cups fresh raspberries

Steps:

  • In a large saucepan, combine the sugar, cornstarch, flour and salt; gradually stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. , Remove from the heat and stir a small amount of hot filling into egg; return all to the saucepan, stirring constantly. 1 egg
1 tablespoon water, plus extra for crimping

Steps:

  • Preheat oven to 400°F (200°C).
  • Place the pie crust on a cutting board, and cut out circle shapes using the top of a coffee cup. Collect scrap pieces, and roll out again to stamp out more shapes, making 12-14 circles total.
  • Fill half the circles with a tablespoon of the cream cheese, followed by a heaping teaspoon of jam.
  • Using your finger, lightly wet the edges of the cut rounds with water.
  • Cover the tops with the remaining circles, pressing the two dough halves together. Crimp edges with a fork to seal.

¼ cup cornstarch
