Time 6h15m

Number Of Ingredients 6

1 pkg kielbasa, smoked or polish sausage (if you want a healthier version, its fine to use turkey sausage-i do!)
1 medium onion, quartered and sliced thin
3 cans beans- any kind will do...a mix is even better (i like black eyed peas, small butter beans and either pinto or northern beans)
1 Tbsp brown or spicy mustard
1/2 to 1 Tbsp cider vinegar (to taste-to give it a little tang)
montreal steak seasoning...or salt, pepper and a little garlic powder

Steps:

  • 1. slice sausage links in half lengthwise then cut into 1/2 inch chunks
  • 2. slice onion as indicated in ingredient list
  • 3. spray either crockpot or medium to large saucepan or soup pot with cooking spray; add sausage and onion
  • 4. pour in the beans, liquid included; add vinegar and mustard- stir to combine (if this is too sour, you can add a tiny bit of sugar to take the edge off); stir in Montreal or other seasonings
  • 5. add just a bit of water to make more 'stew' like but not like a brothy soup- just enough to separate the ingredients a little bit- DO NOT cover the mixture with water
  • 6. turn crockpot on (low if you'll be gone all day, high if you need it in a couple hours) or cook on stove-once it gets to a boiling point, turn heat down and let simmer until flavors blend...re-season to taste
  • 7. ** if you prefer a thicker stock once its done cooking, add a bit of cornstarch/water or use Wondra/gravy flour to thicken....Enjoy!

KIELBASA BEAN SOUP

Kielbasa Bean Soup image

Kinda reminds my family of baked beans with kielbasa in soup form. I found this recipe at our local food pantry. My family loved this soup and my newphews ate it right down. When I made this soup I used 1 more tablespoon garlic powder. 1/4 cup Splenda brown sugar, which I plan to cut back on next time. I used 1/4 cup hot sauce in place of the Tabasco sauce. I will next time use 2 cans kidney beans. I'll cut the green beans out all together as we thought they just weren't right in this. Instead of Garbanzo beans as I don't like them I used 2 cans mexican chili beans. I'll use 2 cans of butter beans next time. I used 2 cans of pork and beans. I used 1 pound Polska kielbasa and next time I'll use 2 pounds.

Tips:

  • Choose the right beans: For this soup, you can use any type of beans you like. However, some beans, such as kidney beans and black beans, hold their shape better than others, such as pinto beans and navy beans. If you're using a bean that tends to break down, you may want to add it to the soup later in the cooking process so that it doesn't overcook.
  • Soak the beans overnight: Soaking the beans overnight will help to reduce the cooking time and make them more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by bringing them to a boil in a large pot of water, then removing them from the heat and letting them sit for an hour.
  • Use a variety of vegetables: This recipe calls for onion, celery, and carrots, but you can use any vegetables you like. Some other good options include potatoes, tomatoes, zucchini, and corn.
  • Don't overcook the vegetables: The vegetables should be cooked until they are tender but still have a little bit of crunch. If you overcook them, they will become mushy and the soup will lose its texture.
  • Use a good quality kielbasa: The kielbasa is one of the main ingredients in this soup, so it's important to use a good quality one. Look for a kielbasa that is made with fresh, high-quality meat and spices.
  • Season the soup to taste: Once the soup is finished cooking, taste it and add more salt, pepper, or other seasonings as needed.

Conclusion:

This easy bean and kielbasa soup is a delicious and hearty meal that is perfect for a cold winter day. It's also a great way to use up leftover beans and vegetables. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying soup that the whole family will enjoy.
