Categories     Muffins

Time 35m

Number Of Ingredients 9

3 large very ripe bananas
1/4 c orange juice
1 stick butter, room temperature
1/2 c brown sugar, firmly packed
2 c flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
4 tsp pumpkin pie spices

  • 2. Add the dry ingredients to the wet ingredients and mix well. Spoon into a muffin tin and bake for 30 minutes. Makes one dozen muffins.
  • 3. variations: substitute one half cup apple sauce for one half cup of the banana and add one half cup raisins and one half cup chopped nuts. OR put slices of banana into each muffin before cooking.

Tips:

  • Choose ripe bananas: The riper the bananas, the sweeter and more flavorful your muffins will be. Ripe bananas will also be easier to mash.
  • Use a large muffin tin: This will help ensure that your muffins bake evenly. If you only have a standard muffin tin, you may need to reduce the baking time by a few minutes.
  • Don't overmix the batter: Overmixing the batter will result in tough muffins. Mix just until the ingredients are combined.
  • Fill the muffin cups about 2/3 full: This will leave room for the muffins to rise in the oven.
  • Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.
