CRISPY BAKED CHICKEN LEG QUARTERS (VERY EASY, ONE DISH)

Crispy Baked Chicken Leg Quarters (Very Easy, One Dish) image

This is one that I adapted from Recipe #199636 after I scored 4 huge chicken leg quarters on sale. ($0.39 a pound!). I added a few things and adjusted the cooking time and temp to to what worked for me. The skin got SO crispy and the chicken was moist and retained the flavors. It also fell off the bone. I hope you enjoy! UPDATE 11/13/15: THANK YOU for all of the great reviews! I am so glad it's such a hit! Make sure you check out the reviews for some other ideas on how to switch it up a little (but the original is still my personal favorite).

Provided by PSU Lioness

Categories     One Dish Meal

Time 1h30m

Yield 4 serving(s)

Number Of Ingredients 5

4 skin-on chicken leg quarters, with bone
1/2 cup soy sauce, divided
1 teaspoon garlic powder, divided
1 teaspoon seasoning salt, divided
1 teaspoon dill weed, divided

Steps:

  • Preheat oven to 375.
  • Line a large glass baking dish with foil. You can also add a baking rack to the pan to keep the chicken out of the grease and to help air circulate and make it crispier.
  • Remove excess fat from chicken quarters.
  • Separate the skin from the chicken, taking care that the skin stays attached at most points on the chicken. (You just want a flap. Do not remove the skin).
  • Brush the chicken (under the skin) with soy sauce.
  • Sprinkle some garlic powder, seasoned salt and dill weed on the chicken under the skin (I estimated the 1 tsp measures. Use as much or as little as you're comfortable with) and rub into the chicken.
  • Arrange the leg quarters in the pan, skin side up, taking care not to crowd. They need space to cook properly.
  • Brush both sides of the leg quarters with soy sauce.
  • Sprinkle the skin with garlic powder, seasoned salt and dill weed (to taste).
  • Place on middle rack in over and bake uncovered for an hour.
  • After an hour, increase oven temp to 400 and bake 15 minutes.
  • Chicken is done when internal temp reaches 165 (insert meat thermometer at thickest part of thigh, taking care not to touch the bone).
  • Let stand for 5 minutes before serving.

SUNNY'S EASY CHIPOTLE CHICKEN BAKED MAC AND CHEESE

Sunny's Easy Chipotle Chicken Baked Mac and Cheese image

Provided by Sunny Anderson

Categories     side-dish

Time 3h20m

Yield 8 to 10 servings

Number Of Ingredients 15

One 7-ounce can chipotle peppers in adobo sauce
2 boneless, skinless chicken breasts, split
3 cloves garlic
1 tablespoon butter or butter-flavored cooking spray, for coating the casserole dish
Kosher salt
16 ounces penne pasta
4 cups heavy cream
16 ounces shredded cheese blend (Mexican or taco blend)
1 1/3 cups Mexican crema
2 tablespoons all-purpose or wheat flour
1/8 teaspoon coarsely ground black pepper
4 scallions, white and green parts, finely chopped
2 large eggs, beaten
1 cup crushed corn tortilla chips (just about the texture of sand)
8 ounces shredded cheese blend (Mexican or taco blend)

Steps:

  • For the chicken and pasta: Remove 4 to 5 chipotle peppers and a bit of adobo sauce from the can and rub it all over the chicken; measure out 2 tablespoons of the adobo sauce and set aside for later (reserve any remaining chiles and adobo sauce from the can for another use). Rest the chicken in a bowl or on a plate for 2 hours total, refrigerated first for 1 1/2 hours, then at room temperature for an additional 30 minutes.
  • In a large pot, add the garlic, chicken and the chipotle peppers from the marinade. Add just enough water to cover, then bring to a boil on medium high. Once boiling, turn the heat to the lowest setting and poach the chicken until cooked through, about 15 minutes. Remove the chicken to a plate and rest (reserve the poaching water for cooking the pasta). Fish out the peppers and discard them; place the garlic cloves in a large bowl and smash them with the back of a spoon or your hands. Once the chicken is cool enough to touch, shred it by hand into bite-size pieces.
  • Preheat the oven to 375 degrees F. Use the butter or cooking spray to coat the bottom and sides of a 13-by-9-inch casserole dish.
  • In the same pot used to poach the chicken, add more water to the poaching water and a nice pinch of salt and bring the pot back to a boil (watch the water; it may foam up a bit from the poaching process). Add the pasta and cook 1 minute less than the package suggests. Drain the pasta in a colander.
  • For the sauce: In the large bowl with the garlic, add the heavy cream, cheese, crema, flour, pepper, scallions, eggs, reserved 2 tablespoons adobo sauce, shredded chicken and cooked pasta. Stir to combine. Pour into the prepared dish.
  • For the topping: In a medium bowl, toss together the crushed chips and cheese. Sprinkle this mixture evenly over the dish. Bake, uncovered, until golden brown on top, about 30 minutes.

6 skinless, boneless chicken breast halves
1 cup soy sauce
½ cup vinegar
1 green bell pepper, chopped
2 (8 ounce) cans sliced water chestnuts, drained

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken in a lightly greased 9x13 inch baking dish. Pour soy sauce and vinegar over chicken, then sprinkle with bell pepper and top with water chestnuts.
  • Bake at 350 degrees F (175 degrees C) for about 40 minutes or until chicken is cooked through and juices run clear.

Nutrition Facts : Calories 197.9 calories, Carbohydrate 13.5 g, Cholesterol 68.4 mg, Fat 1.6 g, Fiber 2.5 g, Protein 30.8 g, SaturatedFat 0.4 g, Sodium 2489.4 mg, Sugar 3.1 g

Tips:

  • Choose the right chicken: For best results, use a whole chicken that is about 3-4 pounds. You can also use chicken breasts or thighs, but you will need to adjust the cooking time accordingly.
  • Season the chicken well: Before baking, season the chicken with salt, pepper, and your favorite herbs and spices. This will help to enhance the flavor of the chicken.
  • Roast the chicken at a high temperature: This will help to create a crispy skin and juicy meat. The ideal roasting temperature for chicken is 400 degrees Fahrenheit.
  • Baste the chicken regularly: This will help to keep the chicken moist and prevent it from drying out. You can baste the chicken with melted butter, olive oil, or a mixture of both.
  • Let the chicken rest before carving: This will allow the juices to redistribute throughout the chicken, resulting in more tender meat.

Conclusion:

Baked chicken is a versatile and delicious dish that can be enjoyed by people of all ages. It is a great option for a weeknight meal or a special occasion dinner. With a little planning and preparation, you can easily make a delicious baked chicken that your family and friends will love.
