1 1/2 cups long grain white rice (*)
1/4 cup oil ((vegetable or canola oil))
1 teaspoon garlic (, minced)
1/4 medium onion (, finely diced)
1/4 cup tomato sauce (, or 2 pureed tomatoes*)
2 teaspoons tomato bouillon (granulated, or cubes*)
1/4 teaspoon salt
1 carrot (, diced)
1/2 cup peas ((frozen or fresh))
3 cups water
1-3 whole serrano peppers (, optional)

Steps:

  • Add tomato sauce, garlic, and diced onion to the pan. Stir. Add tomato bullion, salt, carrots, peas, and water (and serrano peppers, if using. They add a little flavor, but not spice.).
  • Bring to a boil, then cover, reduce heat to low and cook for about 20 minutes or until the water is completely absorbed. Remove from heat and allow to rest for 5 minutes before fluffing with a fork.

EASY AUTHENTIC SPANISH RICE

Easy Authentic Spanish Rice image

My niece, who is of Spanish descent, lives with us and has tweaked my old Spanish rice recipe to make it just like her grandma's. My mother-in-law has also added this recipe to her school meals menu (minus the jalapeno), and it is a hit with the students and faculty.

1/2 teaspoon salt

Tips:

  • Toast the rice in a little bit of oil before adding the liquid. This will help give the rice a nutty flavor and prevent it from sticking to the pot.
  • Use a heavy-bottomed pot or Dutch oven to cook the rice. This will help distribute the heat evenly and prevent the rice from burning.
  • Bring the liquid to a boil before adding the rice. This will help ensure that the rice cooks evenly.
  • Reduce the heat to low, cover the pot, and simmer the rice for 18-20 minutes, or until all of the liquid has been absorbed.
  • Once the rice is cooked, remove it from the heat and let it rest for 5 minutes before fluffing with a fork.
  • Serve the Mexican rice hot, topped with your favorite toppings, such as cilantro, salsa, cheese, or sour cream.
