When I was a young lad I vaguely remember a dish similar to this. With a few modifications, using sun-dried tomatoes, prosciutto, mushrooms and red pepper; this recipe is phenomenal!

2 chicken breasts
100 g prosciutto, thinly sliced
2 tablespoons extra virgin olive oil
8 sun-dried tomatoes, thinly sliced
2 small brown button mushrooms, thinly sliced
1/4 red pepper, thinly sliced
2 garlic cloves
1 teaspoon dried basil

Steps:

  • Slice the red pepper very thin sliced about two inches long.
  • Slice the mushrooms very thinly.
  • Slice the sun-dried tomatoes very thinly.
  • Crush the garlic and put into small bowl.
  • Put sun-dried tomatoes into small bowl.
  • Pour 2 tbsp of olive oil into small bowl Add basil, then mix ingredients together.
  • Butterfly the chicken breasts, then spread them apart to be stuffed.
  • Spread mixture inside of chicken breasts.

1 zucchini, thinly sliced
4 ounces smoked mozzarella, thinly sliced
12 large basil leaves
Vegetable oil, for the grill

Steps:

  • Preheat a grill to medium. Prepare the chicken: With your knife parallel to the cutting board, slice each chicken breast in half horizontally without cutting all the way through; open like a book. Cover with plastic wrap and pound until 1/2 inch thick.
  • Make the garlic-tomato oil: Mix the sun-dried tomato oil and garlic in a bowl; season with salt and pepper.
  • Season the pounded chicken on both sides with salt and pepper and brush with half of the garlic-tomato oil; top with the zucchini, chopped sun-dried tomatoes, mozzarella and basil, leaving a 1-inch border around the edges. 1 1/2 lbs chicken breasts (3)
2 cups buttermilk (use more if necessary to cover)
3 slices prosciutto
3 slices smoked gouda cheese
1 1/2 cups dried breadcrumbs (I like to use panko for the crunch factor)
extra virgin olive oil

Steps:

  • Place a chicken breast between plastic wrap, and pound until about 1" thick. Using a boning knife, slice the breast in half lengthwise, leaving one long side together. Repeat with all chicken breasts. Place the chicken in a bowl, cover with buttermilk, and allow to marinade for 20-30 minutes.
  • Heat a large non-stick skillet with a little EVOO over medium heat. Place breadcrumbs on a plate; set aside. Working with one chicken breast at a time, remove from the bowl and lay a piece of cheese and prosciutto in the middle of each one. Making sure the breast is still coated in buttermilk, dip it in the breadcrumbs to coat. Place the chicken in the hot pan.

1/4 teaspoon freshly ground black pepper
1/4 cup olive oil
1 cup drained sun-dried tomatoes packed in oil
1 cup loosely packed basil leaves
3/4 cup freshly grated Parmesan
1/4 cup pine nuts, toasted
2 cloves garlic
1/2 teaspoon crushed red pepper flakes

1/2 cup extra-virgin olive oil
4 boneless skinless chicken breasts
8 slices provolone cheese
1/4 cup freshly grated Parmesan
12 slices prosciutto
4 cups arugula

  • For the roasted tomatoes: Preheat the oven to 375 degrees F. Line a rimmed baking sheet with parchment.

100 g prawns
4 sun-dried tomatoes, sliced
1/2 avocado, sliced thinly
1/2 cup parmesan cheese

  • Slice chicken breast down the centre length ways, open out, pound with a meat mallet until roughly of equal thickness.

8 ounces feta cheese
8 sun-dried tomatoes
6 large fresh basil leaves, fresh and large sliced
8 ounces mushrooms, sliced
1 red pepper, chopped
1 onion, chopped
4 garlic cloves, chopped
3 tablespoons olive oil
salt and pepper
butter, for greasing pan

Steps:

  • Preheat oven to 350 degrees.
  • Slice the chicken breast in half not going all the way through and spread open, lightly tap down flat with mallet.

4 boneless skinless chicken breast halves (1 pound)
1/2 teaspoon salt
1/2 teaspoon pepper
4 ounces low-fat cream cheese
3 garlic cloves, minced
1/4 cup chopped sun-dried tomato (NOT in oil)
1 1/2 teaspoons dry basil (or 1/2 cup chopped fresh)
1/4 cup shredded parmesan cheese
6 plum tomatoes, chopped
2 teaspoons olive oil
2 teaspoons red wine vinegar

Steps:

  • Pound chicken between two sheets of wax paper, flattening to 1/4 inch thickness using a rolling pin or mallet.
  • Sprinkle with 1/4 teaspoon salt and 1/4 teaspoon pepper.
