Steps:
- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or a silicone baking mat.
- Slice the apples into thin pieces (about 1/4-inch). Put them in a large bowl, and then add the lemon juice, vanilla extract and brown sugar, tossing to thoroughly combine.
- Unfold the sheet of puff pastry onto the lined baking sheet. Lightly score the dough by cutting a border 1 inch from the edges (do not cut through the pastry). Prick the pastry all over with a fork. Shake off any excess liquid from each apple slice, and then arrange them on the puff pastry inside the border area.
- Whisk together the egg with 1 tablespoon water in a small bowl. Brush the edges of the pastry with the egg wash. Bake the tart until golden and puffed, 15 to 17 minutes.
- Remove the tart from the oven, drizzle it with the caramel sauce and sprinkle it with sea salt if desired. Slice and serve immediately.

Steps:
- Heat oven to 425°F. Make pastry as directed-except roll into 13-inch round. Place on ungreased large cookie sheet. Cover with plastic wrap while making filling.
- In large bowl, mix brown sugar and flour. Stir in apples. Remove plastic wrap from pastry. Mound apple mixture in center of pastry to within 3 inches of edge. Cut butter into small pieces; sprinkle over apples. Fold edge of pastry over apples, making pleats so it lays flat on apples (pastry will not cover apples in center). Sprinkle pastry with sugar.
- Bake 30 to 35 minutes or until crust is light golden brown. Cover center of pie with 5-inch square of foil during last 10 to 15 minutes of baking to prevent excessive browning. Cool on cookie sheet on cooling rack 1 hour, or serve warm if desired.

QUICK & EASY (AND YUMMY) APPLE TART
If you want to make a very quick, very easy dessert that also happens to yield impressive results, look no farther than the freezer section of your grocery store, where you can find frozen sheets of ready-made puffed pastry. Puffed pastry is a magical substance-it looks like nothing in the package, but bakes into a puffy, golden, textural substance that make the perfect crust for fruit tarts, chocolate pastries, hors d'oeuvres...the list goes on. Tips:
- For the best flavor, use a variety of apples, such as Granny Smith, Honeycrisp, and Braeburn.
- Be sure to peel and core the apples before slicing them.
- If you want a sweeter tart, add a tablespoon or two of sugar to the apple filling.
- To make a gluten-free tart, use a gluten-free pie crust mix or make your own gluten-free pie crust.
- If you don't have a pie plate, you can also bake the tart in a 9-inch springform pan.
