6 slices bacon, chopped
1 large onion, diced
3 cloves garlic, minced
2 cups chicken broth
pinch of dried oregano
pinch of cayenne pepper
½ teaspoon ground cumin
salt to taste
2 (14.5 ounce) cans black beans, rinsed and drained
14 ½ fluid ounces water
½ teaspoon ground black pepper
⅓ cup minced green onion
2 teaspoons sambal paste (or minced red chiles)
juice of 1 lime
2 tablespoons chopped green onion
3 tablespoons sour cream

Steps:

  • Place bacon in a cold pot. Turn heat to medium, cook and stir until the bacon is cooked but not crisp.
  • Stir in onion; cook and stir for 5 minutes, until the onion turns translucent and golden.

Tips:

  • Use canned black beans: Canned black beans are a convenient and time-saving option. They are already cooked and ready to use, so you can skip the step of soaking and cooking dried beans.
  • Rinse the black beans: Before using canned black beans, be sure to rinse them well under cold water. This will remove any excess sodium and starch, and help to improve the flavor of the soup.
  • Use a variety of vegetables: This recipe calls for onion, garlic, bell pepper, and corn. Feel free to add other vegetables that you like, such as carrots, celery, or zucchini.
  • Use a good quality broth: The broth is an important part of the soup, so be sure to use a good quality broth. You can use chicken broth, vegetable broth, or even a combination of the two.
  • Season the soup to taste: This recipe is a good starting point, but you may want to adjust the seasonings to your liking. Add more salt, pepper, or chili powder to taste.
  • Serve with your favorite toppings: Black bean soup is delicious served with a variety of toppings, such as sour cream, avocado, cilantro, or cheese.

Conclusion:

Black bean soup is a delicious, healthy, and easy-to-make soup that is perfect for a quick and easy meal. It is also a great way to use up leftover black beans. With a few simple ingredients and a little bit of time, you can have a delicious and satisfying soup that the whole family will enjoy.
