1 lb. sliced beef liver
1 medium onion sliced
1 cup white flour
1 tbsp seasoning salt
2 tablespoon butter
2 teaspoon kitchen bouquet
1 1/2 cup water
salt and pepper
oil for frying

Steps:

  • Place the flour and seasoning salt in a bowl and whisk to mix.
  • Pre-heat a large skillet on medium-high meat. Add enough oil to cover the bottom of the skillet.
  • Dredge the beef liver in the seasoned flour mixture and brown on each side for one minute. Remove the liver and all fatty bits and impurities from the skillet.
  • Reduce the heat to medium and melt the butter in the skillet. Add 4 tablespoons of the flour mixture to the skillet and stir. Cook on medium heat until it starts to turn a dark golden brown.
  • Stir in the water and simmer until the gravy starts to thicken. Stir in the kitchen bouquet and more water if needed. Put the liver back into the skillet and top with the onion slices.
  • Simmer on low for 15-20 minutes or until the onions are tender.

1 to 1 1/2 lb calf's liver
2 large onions
flour
hungarian sweet paprika
1 stick butter
salt & pepper to taste
1 Tbsp good quality red or white vinegar (my preference is red)

Steps:

  • 1. Slice the liver into finger-sized strips.
  • 2. Season the liver with salt and pepper to taste.
  • 3. Liberally season the liver with paprika.
  • 4. Lightly dredge the liver in flour and put aside in a bowl or on a plate.
  • 5. Slice the onions thinly.
  • 6. Slowly melt the butter in a frying pan. Sauté the onions very slowly, on medium heat, until caramelized.
  • 7. As soon as the onions are caramelized, add the liver to the pan along with the onions. The liver should only take about 6 - 8 minutes to cook. Toss several times while cooking and add small amounts of water, in increments, if necessary. Be VERY careful not to overcook the liver!
  • 8. When done, liberally sprinkle paprika over everything and mix in the vinegar to make a thick onion gravy. Ready to serve! * Mashed potatoes and my recipe for Hungarian Cucumber Salad are the perfect accompaniment to this dish.

6-8 slice bacon, cooked, save drippings
5 medium onions, vidalia, peeled, sliced thin
1- 1/2 lb beef liver
1/4 c all purpose flour
3/4 c water
1 tsp kosher salt
1/2 tsp freshly ground black pepper
1 Tbsp kitchen bouquet or gravy master

Steps:

  • 1. Fry bacon, drain on paper towels; set aside. Cook onions in bacon drippings until slighlty carmelized. Remove with a slotted spoon to a bowl; set aside.
  • 2. Mix flour with salt and pepper, dredge liver in mixture. Fry Liver in remaining bacon drippings for about 1-1 1/2 minutes per side. Remove liver and set aside.
  • 3. Add onions and water to drippings in the pan, cover and simmer until gravy is as thick as you like. Add 1 teaspoon gravy master or kitchen bouquet for color. You can add a little more water if necessary to prevent sticking.
  • 4. Put liver back in skillet with gravy and onions and make sure it is heated all the way through.
  • 5. I serve with mashed potatoes and a slice of bacon.

1 large onion, sliced
1 pound beef liver
½ cup all-purpose flour
1 teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste
1 (8 ounce) can tomato sauce
¼ cup water
½ teaspoon dried oregano

Steps:

  • Heat vegetable oil in a large skillet over medium heat. Saute onions until soft, but not browned. Remove from pan using a slotted spoon, and set aside. Slice the liver into serving size pieces, and remove any membrane.
  • In a shallow dish, mix together the flour, salt and pepper. Dredge the liver in the flour mixture, and place into the hot skillet. Brown the liver quickly on each side. Place reserved onions on top of liver pieces. Pour the tomato sauce and water over everything in the pan, lifting the liver pieces to let the tomato sauce coat the bottom of the pan.
  • Sprinkle the oregano over everything, and simmer over low heat for 8 to 10 minutes, stirring occasionally. Adjust salt and pepper to taste. Be careful not to overcook, or liver will be tough. I serve this with mashed potatoes and green beans.

3/4 cup water

  • Liver.
  • Defrost the liver and soak in cold water for about 5-10 minutes.
  • Pad them dry and dash all slices with the salt and pepper.
  • Coat the bottom of a large skillet with a generous amount of olive oil.

1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

4 rashers smoked streaky bacon
2 tbsp plain flour, seasoned
pinch dried sage (optional)
6 slices lamb's livers (about 400g/14oz)
1 tbsp olive oil
1 onion, thinly sliced
300ml beef stock
2 tbsp ketchup

Steps:

  • Cook the bacon in a large non-stick frying pan until crisp. Meanwhile, mix the flour and sage, if using, and use to dust the liver. Remove bacon from the pan and set aside. Add the oil to the pan and brown the liver for about 1 min on each side. Remove from the pan, then fry the onion until softened. Stir in stock and ketchup, then bubble for 5 mins.

3 tablespoons extra virgin olive oil
1 1/2 lbs beef liver, sliced
1 -2 onion, thinly sliced
1 cup beef broth
