EASY AIR FRIED CORN RIBS

Easy Air Fried Corn Ribs image

These air fried corn ribs are reminiscent of Mexican street corn, but each ear is split into quarters and then air fried. I used frozen corn on the cob which I thawed.

Provided by thedailygourmet

Time 22m

Yield 4

Number Of Ingredients 6

4 ears ears corn on the cob
3 tablespoons "Everything but the Elote seasoning" (Trader Joe's®), divided
nonstick cooking spray
¼ cup grated cotija cheese
2 tablespoons Mexican crema, crema fresca
1 tablespoon minced fresh cilantro, or more to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) for 7 minutes.
  • Meanwhile stand corn cobs on the end, and with a sharp knife (I used a wüsthof nakiri) cut each ear down the middle. Place corn cob halves flat on a cutting board and cut in half lengthwise (you will get a total of 4 'ribs' per ear of corn).
  • Spray each corn rib with non-stick spray. Sprinkle 2 tablespoons of seasoning over the 16 corn ribs.
  • Air fry corn ribs in batches for a total of 12 minutes. Remove from air fryer.
  • Drizzle crema con sal over corn 'ribs' and sprinkle with cotija cheese and remaining seasoning. Garnish with chopped cilantro.

CORN RIBS

Provided by Ree Drummond : Food Network

Time 40m

Yield 3 to 4 servings

Number Of Ingredients 13

1 tablespoon brown sugar
1 tablespoon smoked paprika
1 heaping teaspoon garlic powder
1 large pinch kosher salt
1 large pinch black pepper
3 ears corn, shucked
2 tablespoons olive oil
1/4 cup mayonnaise
1/4 cup BBQ sauce
2 tablespoons brown mustard
1 tablespoon honey
1/2 cup store-bought fried onions
2 green onions, sliced thin

Steps:

  • Preheat the oven to 425°F. Cover the bottom of a baking sheet with parchment paper.
  • For the ribs: In a small bowl, mix together the brown sugar, paprika, garlic powder, salt and pepper. Set aside.
  • Using a sharp knife, carefully halve the ears of corn lengthwise (see Cook's Note). Then, cut each half lengthwise, creating 4 equal pieces. Brush each with the olive oil and season the corn with the spice mix. Transfer to the prepared baking sheet.
  • Bake until the corn is nicely charred and the slices begin to curl, resembling ribs, 18 to 20 minutes.
  • While the ribs bake, make the mustard mayo: Mix together the mayonnaise, BBQ sauce, mustard and honey in a small bowl. Set aside.
  • Remove the ribs from the oven and immediately brush with a little bit of the sauce. Transfer the corn ribs to a platter. Sprinkle over the fried onions and the green onions, then serve.

Tips:

  • For crispier corn ribs, use fresh corn on the cob and cut them into thicker slices. Ensure the slices are of uniform thickness for even cooking.
  • Before air frying, toss the corn ribs in a mixture of melted butter, olive oil, salt, and spices for extra flavor. You can also use your favorite seasonings or marinades.
  • Preheat your air fryer to the desired temperature before adding the corn ribs. This helps to ensure even cooking and prevent the corn ribs from sticking to the basket.
  • Cook the corn ribs in batches if necessary, avoiding overcrowding the air fryer basket. This will ensure proper air circulation and prevent the corn ribs from steaming instead of crisping up.
  • Shake or toss the corn ribs halfway through the cooking time to ensure even browning and crispiness on all sides.
  • Serve the corn ribs hot with your favorite dipping sauce or seasoning. Some popular options include ranch dressing, honey mustard, barbecue sauce, or a simple sprinkle of salt and pepper.

Conclusion:

Air-fried corn ribs are a delicious and healthy snack or side dish that can be enjoyed by people of all ages. They are easy to make, customizable to your taste preferences, and a great way to use up leftover corn on the cob. With just a few simple steps and ingredients, you can create a crispy, flavorful treat that is sure to be a hit at your next gathering. So, gather your ingredients, preheat your air fryer, and get ready to enjoy this delightful recipe for air-fried corn ribs!
