EASIEST SNAPPER

I cut this recipe out of some long-forgotten publication ages ago and it has been a favorite fish dish ever since. Works fine with other fish filets, as well. Onion, chives, or leeks may be substituted for green onion if desired.

Time 20m

Yield 2 , 2 serving(s)

Number Of Ingredients 5

2 ounces red snapper fillets
1/4 cup mayonnaise
1/4 cup softened butter
1/2 cup grated parmesan cheese
3 tablespoons green onions, chopped

Steps:

  • Preheat oven to 425°F.
  • Place the fish in a lightly buttered baking dish with skin side down.
  • Bake at 425°F for 12 to 15 minutes per inch of thickness.
  • Mix all the remaining ingredients together.
  • When fish is cooked through, spread mixture over the top.
  • Place under broiler until top is brown and bubbly. Serve.

Tips:

  • Choose the right snapper: Look for a fish with bright, clear eyes, red gills, and a firm body. Avoid any fish with a slimy texture or an unpleasant odor.
  • Prepare the snapper properly: To ensure even cooking, score the snapper's skin in a few places before cooking. This will help the heat penetrate the fish more easily.
  • Use a flavorful marinade: Marinating the snapper in a mixture of olive oil, lemon juice, herbs, and spices will add flavor and moisture to the fish.
  • Cook the snapper over medium heat: Cooking the snapper over medium heat will help prevent the fish from drying out. If you are using a grill, cook the snapper over indirect heat.
  • Check the snapper for doneness: The snapper is cooked when it flakes easily with a fork. The internal temperature of the fish should be 145 degrees Fahrenheit.

Conclusion:

Snapper is a delicious and versatile fish that can be prepared in a variety of ways. Whether you are grilling, baking, or pan-frying snapper, following these tips will help you create a delicious and memorable meal. So next time you are looking for a healthy and flavorful seafood option, give snapper a try. You won't be disappointed!
