EASIEST & CHEESIEST MACARONI AND CHEESE
This is my personal recipe. I love Stouffer's mac and cheese and I decided to take a chance at making my own. This is pretty close and in a house of picky eaters, the first time I made it--it was gone in minutes. I have a rather large family, so you can halve the recipe to make for a smaller family. Also the larger recipe is good if you want to serve as a meal.

EASIEST AND CHEESIEST STOVE TOP MACARONI AND CHEESE
This is my Grandmother's recipe. I have no idea where it originated, but I don't ever remember a family gathering growing up when this was not served. It is not a gourmet macaroni and cheese, but it is fast and good. The only thing anyone ever says after eating it is "May I have some more please?".

Steps:
- Bring water, butter and salt to rolling boil; add macaroni.
- Cook over medium heat for 8 to 10 minutes or until water is cooked down a bit and pasta is ready.
- Take off heat. DO NOT DRAIN.
- Add evaporated milk and Velveeta cheese.
- Stir, then cover pot and allow to sit for a few minutes until cheese is melted.
- Uncover and stir again.
- If too dry, add more evaporated milk.
- Serve.
Tips:
- Use a good quality cheese. The type of cheese you use will greatly affect the flavor of your macaroni and cheese. Use a sharp cheddar cheese for a classic flavor, or experiment with different types of cheese to create your own unique dish.
- Cook the macaroni al dente. This means that the macaroni should be cooked until it is tender, but still has a slight bite to it. Overcooked macaroni will become mushy and will not hold its shape well in the macaroni and cheese.
- Make a roux. A roux is a mixture of butter and flour that is used to thicken the cheese sauce. A roux will help to prevent the cheese sauce from becoming too thin or runny.
- Use milk or cream. Milk or cream will help to make the cheese sauce smooth and creamy. You can use whole milk, low-fat milk, or even heavy cream, depending on how rich you want your macaroni and cheese to be.
- Season the cheese sauce to taste. Add salt, pepper, and any other desired seasonings to the cheese sauce to taste. You can also add a pinch of cayenne pepper for a little bit of heat.
- Top with breadcrumbs or crushed crackers. This will give your macaroni and cheese a nice crunchy topping. You can also add some grated Parmesan cheese for extra flavor.
