This is the easiest recipe imaginable. It may be one of the reasons that Velveeta was invented. It's also low carb and delicious. What else do you need? I've never seen this serve more than four people, two in my household.

1 head cauliflower
Velveeta cheese, sliced 1/2 inch thick
1/4 cup heavy cream

Steps:

  • Wash the cauliflower and break into florets.
  • Steam until still crisp, but just starting to soften.
  • Drain well (let sit in colander for 5 mins.) and place in an ovenproof dish.
  • Pour the cream into the bottom of the dish.
  • Place enough cheese slices to completely cover on top of the cauliflower.
  • Place in the oven, uncovered with whatever else you are making (or at 350-400 degrees) and bake for 15 minutes, stirring every five minutes.
  • If the resulting sauce seems too thick, add an extra splash of cream, if too runny, let sit a few minutes.

2 large heads cauliflower
1 jar(s) (15 oz.) cheez whiz
salt and pepper

Steps:

  • 1. Clean cauliflower and cut up into large flowerets, including stems. Place in a very large pot of boiling salted water and simmer, covered, for about 15 minutes, or until mostly tender.
  • 2. Drain water from pot. Stir cauliflower, breaking it up partially. Add Cheez Whiz and mix thoroughly.
  • 3. Heat over low-medium heat until cheese is completely melted and mixture reaches desired consistency--which is entirely up to you. It could take up to 40 minutes on low heat, but don't use higher heat or it will burn.
  • 4. Stir frequently; add salt and pepper to taste, and serve. Goes equally well with turkey or ham during the holidays.
