3 -4 lbs baby potatoes
2 cups corn (frozen or canned)
1/2 red onion, medium dice
3 -5 garlic cloves, lightly smashed
1/2 lb bacon, crumbled
1/4-1/3 cup parmesan cheese
1/3 cup sour cream
1/3 cup mayonnaise
1 teaspoon horseradish
2 tablespoons lemon juice
1 tablespoon dill
salt
fresh pepper
olive oil

Steps:

  • Preheat oven to 425.
  • Dice potatoes in salad size pieces. Put them in a single layer on a cookie sheet.
  • Spread corn evenly over potatoes.
  • Spread chopped onions over potatoes.

7 slices bacon
whole kernel corn, 347 ml can
green onions, chopped with greens 1/3 cup plus more for garnish
1/2 cup mayonnaise
1/3 cup sour cream or greek yogurt
1 tsp horseradish cream sauce
1 tsp lemon juice
1-2 tbsp fresh dill

Steps:

  • Heat oven to 400 degrees F.
  • Quarter baby potatoes and spread them out evenly over a baking sheet covered in parchment paper.
  • Drizzle with olive oil and sprinkle with seasoning salt and roast in the oven for 35-40 minutes, flipping halfway through cooking.
