Steps:
- 1. Make a Meatloaf to your favorite recipe, omitting any bread or cracker crumbs.
- 2. Crush the pork rinds in a Ziplock bag w/ a rolling pin until they're coarse powder.
- 3. Substitute the crushed pork rind for whatever you used as your binder. Same consistency as what you normally make.
- 4. Either bake it in an oven or do as I did, use a greased stoneware Bundt pan and into the microwave for 15~17min on high, checking at the 3/4 mark for doneness. You can use a food thermometer or an old Chef's trick if you like. Stick a BBQ stick/skewer into the center and quickly put it under your lower lip. If it's HOT, you're most likely done. You can always stick it back in for a minute or two.
- 5. The reason for this method? I have a buddy that loves meatloaf. He does NOT like breading or crackers of any kind in it. I told him "You HAVE to have some binder to help it hold together". I agonized and then a light bulb flashed!!! :-) You can't tell that pork rind is in there. Holds well and slices fine for those wonderful fried in butter thin slices for sandwiches the next day. So your arteries scream! So WHAT! :-)

EASY AND QUICK MEATLOAF
I found this recipe while searching for a easy and quick meatloaf. I added a few ingredients on my own (green pepper, red pepper and cheese) and it turned out great. My family had it with white rice and hashbrowns and loved it. Now i make it every Sunday.

PENNSYLVANIA DUTCH MEATLOAF
An easy meatloaf with a slightly crunchy veggie texture. Flavorful sauce adds that classic slightly sweet & tangy tomato flavor. HINT: To reduce fat, I bake this for one hour, pour any grease off and *then* pour the sauce over and then bake for the last 15 minutes.

DUTCH MEATLOAF
I adapted this recipe from an old elementary school cookbook, making a few good-for-you substitutions. I used to make this meatloaf all of the time when I was younger--it was often requested by my parents for special dinners. You can use any type of ground beef, chicken, or turkey you'd like -- it tastes just as good!

Steps:
- Preheat oven to 350 degrees.
- Using a large spoon, combine onion, 8-oz tomato sauce, breadcrumbs, egg, salt, and pepper.
- Add ground beef, mixing with hands.
- Form into a loaf and place into a casserole dish, preferrably one with a lid. I like to poke a few holes into the top of the loaf so some of the sauce can get down into the loaf itself.
- In a bowl, whisk together water, 8-oz tomato sauce, mustard, brown sugar, and vinegar.
- Pour half of the mixture over the loaf. Cover the casserole dish with the lid, and bake the meatloaf for 1 1/2 hours. Baste at least once.
- Pour the remaining mixture into a saucepan and bring to a simmer, allow sauce to reduce until about as thick as tomato sauce. This takes about 20 minutes.
- Allow meatloaf to cool for 10 minutes before slicing. Pour thickened sauce over slices to serve.

- Bake the meatloaf in a loaf pan at 350°F for about 1 hour, or until it reaches an internal temperature of 160°F.
