This should be a thick soup, but I often add water if too much liquid has boiled away. It has a nice consistency, and the garnishes add flavor.

Tips:

  • For a smoky flavor, roast the poblano pepper directly over a gas burner or under the broiler until the skin is charred. Then, place the pepper in a paper bag and let it steam for 10 minutes. Once cool enough to handle, remove the charred skin and seeds.
  • To make the soup even heartier, add 1 cup of cooked rice or quinoa.
  • If you don't have a Dutch oven, you can make this soup in a large pot over medium heat. Just be sure to reduce the cooking time by about 10 minutes.
  • Serve the soup with your favorite toppings, such as sour cream, avocado, cilantro, and lime wedges.

Conclusion:

This Dutch oven black bean soup is a delicious and easy-to-make meal that is perfect for a weeknight dinner. It is packed with flavor and nutrients, and it is sure to be a hit with the whole family. So next time you're looking for a quick and easy soup recipe, give this one a try.
