MASHED POTATOES:
2 potatoes, cooked
1/4 cup cream
2 tablespoons butter
Salt and pepper
DRESSING:
6 slices bacon
1/2 cup water
1/4 cup vinegar
6 scallions, sliced
4 tablespoons sugar
SALAD:
4 cups young lettuce or spinach leaves
4 hard boiled eggs, sliced

Steps:

  • Make the Mashed Potatoes: Cook the potatoes until tender. While the potatoes are cooking, heat up the cream. Add the butter and stir until melted. 2 cups plus 2 tablespoons water, divided
5 thick-sliced bacon strips, diced
4 teaspoons all-purpose flour
1 tablespoon sugar
1 cup 2% milk
1/2 teaspoon salt
1 egg yolk, lightly beaten
1/3 cup cider vinegar
