CHEF JOHN'S DUTCH BABIES

Chef John's Dutch Babies image

I've always been fascinated by how many different breakfast foods you can create using just milk, eggs, and flour; and this is one of the more interesting examples. Especially considering the unusual, and borderline disturbing name. Sometimes called German pancakes, these have very little to do with Germany, and nothing to do with the Dutch. Apparently they were invented by German immigrants who were referred to as Dutch.

MEAN'S DUTCH BABIES

Mean's Dutch Babies image

A simple and tasty breakfast/brunch treat. This is an adopted recipe from the RecipeZaar account, and I am delighted to be the new owner of such a winning recipe. If you would like the inside of the finished dish to be a little less "egg-y" then cut the number of eggs down to 3, and many many reviewers also found that just 3 Tablespoons of butter worked better for them. Either way they did it, they all agreed that the taste was great. Enjoy!

DUTCH BABIES (GERMAN PANCAKE)

DUTCH BABIES (GERMAN PANCAKE) image

Categories     Egg     Breakfast     Bake     Quick & Easy

Yield 3-5 people

Number Of Ingredients 5

1 cup flour
1 cup milk
6 eggs
1/4 cup (real salted) butter
prepare toppings ahead of time, so that they may be added immediately, and the Dutch Babies may be eaten hot.

Steps:

  • Place butter in a square or rectangular flat bottomed casserole pan, we use two 8x12x2in pans, but you can use other sizes, just be sure that the sides of the pan(s) are at least 2 inches tall and the batter is only about 1/2 in deep at most. If the batter is too deep, it will not develop hills, but if it is too thin it will crisp or burn before hills form. Place pan in oven and pre-heat oven (and pan) at 425 degrees; melting butter while you prepare the batter. Whisk milk, flour, and eggs until smooth. Pour batter into pre-heated pan, and return to oven. Bake for approx. 20 minutes or until the peaks are golden brown. Remove from oven, slice into big squares, and serve while hot.

###

Tips:

- Use a well-seasoned cast iron skillet to ensure even cooking and a crispy bottom. - For a richer flavor, use heavy cream instead of milk. - Add a variety of mix-ins, such as berries, apples, or nuts, to create a customized Dutch baby. - For a gluten-free version, use gluten-free flour. - Serve the Dutch baby immediately, topped with butter, powdered sugar, or maple syrup.

Conclusion:

With its simple ingredients and easy preparation, the Dutch baby is a delicious and versatile dish that can be enjoyed for breakfast, brunch, or dessert. Whether you prefer a classic Dutch baby or one with your favorite mix-ins, this dish is sure to become a family favorite. So next time you're looking for a quick and easy meal, give the Dutch baby a try!
