2 crowns broccoli
4 cloves garlic, minced
1/2 shallot, minced
1 tablespoon red wine vinegar
Lemon juice
2 teaspoons olive oil
1 teaspoon salt
1/4 cup whole milk
Toast Points:
1 loaf white bread
Olive oil
Salt
1 1/2 cups duck mousse
1/4 cup heavy cream
2 tablespoons diced pimientos
1 tablespoon lemon juice
Salt and pepper
1/2 cup packed micro-parsley
2 cloves garlic, minced
Zest of 2 lemons
Juice of 1 lemon
Salt

Steps:

  • For the charred broccoli puree: Coarsely chop the broccoli and toss in a bowl with the garlic, shallot, vinegar, 1/2 tablespoon lemon juice, olive oil and salt.
  • Transfer the broccoli to a skillet and broil on high for 6 to 8 minutes, turning occasionally, until charred.
  • Add the broccoli to a food processor along with the milk, a few tablespoons lemon juice and salt and pepper. Process until smooth.

2 cups freshly squeezed orange juice, from about 6 oranges
2 oranges, zested
2/3 cup sugar
1 (5-pound) Pekin duck, cleaned, with innards, wing tips and excess fat removed
1 tablespoon bitters
2 cups duck or chicken stock
2 tablespoons arrowroot dissolved in 2 tablespoons cold water
1 cup orange liqueur

Steps:

  • Preheat oven to 500 degrees F.
  • Roughly chop the orange rinds after juicing and place in the cleaned duck cavity. Place the stuffed duck on a baking rack over a baking sheet with 1/2-inch of water. Bake until skin turns golden brown and lightly crisps, about 30 minutes. Reduce temperature to 300 degrees and continue cooking until duck reaches an internal temperature of 170 degrees, about 1 hour.
  • In a medium heavy saucepan combine the orange juice, zest and sugar over medium high heat and reduce nearly 3/4 in volume, to about 3/4 cup. Add bitters to orange juice gastrique, and set aside. Place duck stock in clean saucepan and bring to a boil over high heat. Add hot stock to reduced orange gastrique, and continue to simmer over medium low heat for 10 minutes to make sauce.
  • Remove duck from roasting pan and discard drippings in bottom of pan. Return duck to roasting pan and place pan over 2 burners over medium high heat. Add orange liqueur to pan and cook off the alcohol, scraping the pan continuously with a large wooden spoon. Add 1 cup of the orange sauce to the roasting pan and cook 1 minute. Remove duck from the pan and discard orange rinds in cavity. Place duck on serving platter and let sit 10 minutes before carving. Combine roasting pan juices and orange sauce in a gravy boat and serve with carved duck.

Duck Liver

12 ounces good quality purchased duck liver mousse or fine textured pate
1 tablespoon Ruby port
1 teaspoon freshly ground black pepper
3 cups miniature croutons, recipe follows
3 cups bread (1 day old, preferably thin sliced white bread, with the crust removed)
3 tablespoons butter, melted
1 teaspoon dried thyme leaves
1/2 teaspoon salt

Steps:

  • Place mousse in a bowl and drizzle port over the mousse. Mash with a fork until the mixture is workable and the port is incorporated. Work in the black pepper. Do not overwork. Refrigerate for 1/2 hour or until firm.
  • Remove from refrigerator and divide evenly into 24 uniform "truffles." Using your hands, quickly roll the mousse into balls. When finished roll the truffles in the miniature croutons Transfer to a storage container and refrigerate until ready to serve.

1 tablespoon canola oil
4 shallots, finely diced (about 1/4 cup)
3 tablespoons honey
3 tablespoons sherry vinegar
1/4 cup port wine
1/2 cup veal, stock or demi glace
Salt and freshly ground black pepper to taste
6 to 8 fresh figs
Fresh brioche loaf, sliced and toasted

Steps:

  • Heat the canola oil in a saute pan over medium heat. Season the duck livers with salt and pepper and add the livers to the hot oil. 2 whole boneless skinless duck breasts
1 lime, juiced
1 cup sour cream
Salt and pepper
1/2 tablespoon canola oil
1 cup barbeque sauce
8 flour tortillas
1 Maui onion, sliced thin, sauteed to golden brown
1 ripe mango, peeled, seeded, and cut into thin strips
1 roasted poblano chili, peeled, seeded, and cut into thin strips
1 small red onion, cut into thin rings and grilled
1 cup grated jalapeno Jack cheese
1 tablespoons freshly chopped cilantro
4 sprigs fresh cilantro

Steps:

  • Prepare a smoker for cold smoke. Place duck breasts on a smoker rack and put in the smoker for 15 minutes. Remove from the smoker.
  • In a small bowl add fresh lime juice to sour cream and stir. Season with salt, to taste, and refrigerate until ready to serve.

Sprinkle the sauteed Maui onion, mango, poblano chili, red onion, cheese, and cilantro evenly over duck mixture. Top with the remaining 4 tortillas and brush each side with canola oil. Bring a large saute pan or griddle to medium heat. Place 1 tortilla stack in the pan or griddle and cook until golden brown or about 3 minutes. Using a spatula flip tortilla over to cook other side. Remove from pan and place on cutting board and cut into 6 wedges. Place on a warm plate and dab lime sour cream on each wedge and garnish with a cilantro sprig. Repeat with the remaining tortilla stacks.
