BROWN SUGAR AND SPICE DRY HAM RUB
I created this recipe when frustrated by the packets of glaze that came with spiral hams bought at the grocery store. It is sweet, with the perfect amount of spice, and makes a nice crust on the outside of the ham, similar to the famous ham store's. This recipe makes enough to cover a 3 to 5 pound ham. Store in an airtight tin if not using immediately.

Steps:
- Mix together brown sugar, pumpkin pie spice, mustard powder, onion powder, and pepper in a bowl until well blended. Makes enough rub to cover one 3 to 5 pound ham. To be sure sugars form a crust, do not cover the ham during cooking. If not using immediately, store in an airtight tin.

DRY SPICE RUB

Steps:
- A dry spice rub is a fast, simple alternative to a marinade that is applied to meat before it is cooked. Rubs are easy to make and work great on chicken, meat and fish. Combine the above ingredients. Cover the meat with the spice mixture and rub it into the meat to release the flavor. You can preserve any extra rub for use later. Use this basic technique with different spices.
DRY JERK SPICE RUB
Traditional in Jamaican kitchens, jerk seasoning packs a hot punch that is mellowed by the sweetness of sugar and perfume of spices such as cinnamon and allspice. To tame the heat, cut back on the ground red pepper. You can use this rub with pork, chicken, or fish. I used the rub on pork and it was wonderful!!

Steps:
- Preparation.
- Combine all ingredients in a bowl, stirring well. Store in an airtight container up to 4 weeks.
Tips:
- Choose the Right Spices: Select spices that complement the type of meat or fish you're cooking. Consider the flavor profile you want to achieve - sweet, savory, smoky, or spicy.
- Freshly Ground Spices: Whenever possible, use freshly ground spices instead of pre-ground ones. This will give your spice rub a more intense flavor.
- Experiment with Different Combinations: Don't be afraid to experiment with different combinations of spices to find a rub that suits your taste. You can mix and match spices from different cuisines to create unique and flavorful blends.
- Roast or Toast Spices: Roasting or toasting spices before grinding them can enhance their flavor and aroma. This technique is commonly used in Indian cuisine.
- Use a Mortar and Pestle: A mortar and pestle can be a useful tool for grinding spices and creating a smooth and consistent rub.
- Adjust the Heat Level: If you prefer a milder rub, reduce the amount of cayenne pepper or other spicy ingredients. Conversely, if you want a spicier rub, increase the quantity of these ingredients.
- Store Properly: Store your spice rubs in airtight containers away from direct sunlight to preserve their flavor and potency.
Conclusion:
Experimenting with different spice rubs is a great way to add flavor and variety to your cooking. Whether you're grilling, roasting, or baking, a well-crafted spice rub can elevate the taste of any dish. With careful selection and preparation, you can create your own signature spice rubs that will impress your friends and family. Remember to store your spice rubs properly to maintain their freshness and flavor. Happy cooking!
