MEMPHIS DRY-RUBBED BABY BACK RIBS RECIPE

Memphis Dry-Rubbed Baby Back Ribs Recipe image

These smoked ribs are surprisingly easy to make, even for a first-timer.

Provided by Southern Living Test Kitchen

Time 4h

Yield Serves 4

Number Of Ingredients 15

2 (2 ½- to 3-lb.) slabs baby back pork ribs
⅓ cup kosher salt
¼ cup packed dark brown sugar
3 tablespoons paprika
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dry mustard
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon ground allspice
1 tablespoon herbes de Provence
1 cup apple cider vinegar, divided
1 cup water, divided
2 handfuls wood chunks for smoking (hickory, oak, or pecan)

Steps:

  • Pat both sides of slabs dry with paper towels. Using a sharp knife, remove thin membrane from back of each by slicing into it and pulling it off with a paper towel. (This will make ribs more tender and allow meat to absorb the rub better.) Combine salt, brown sugar, paprika, pepper, garlic powder, onion powder, dry mustard, chili powder, cumin, allspice, and herbes de Provence in a medium bowl. Rub ¾ cup mixture evenly over both sides of slabs, and let stand at room temperature 30 minutes.
  • Prepare a charcoal fire in smoker according to manufacturer's instructions, substituting a mixture of ¾ cup each of the vinegar and water in drip pan. Bring internal temperature to 250°F to 275°F, and maintain for 15 to 20 minutes. Place wood chunks on coals. Place slabs on smoker, meaty side up; cover with lid.
  • Smoke ribs, maintaining inside temperature between 250°F and 275°F, until meat is tender to the touch and pulls away from bones on the ends, 3 hours to 3 hours and 30 minutes. Remove ribs, and place on a baking sheet. Stir together remaining ¼ cup each of vinegar and water. Spritz or brush vinegar-water mixture on both sides of ribs to thoroughly moisten. If desired, rub remaining ½ cup brown-sugar mixture on both sides of the ribs. Slice ribs between the bones, and serve.

Steps:

  • Take a slab of baby back ribs. For the dry rub mix, all amounts in tbsp, 3/4 garlic powder, 1/2 dried oregano, 1/2 celery seed, 1 smoked paprika, 1/2 chili powder, 3/4 ancho chile powder, salt and pepper. Mix and rub into meat. Soak applewood smoking chips for grilling. For grill turn on only one side and preheat high and then turn way low to about 200 degrees. Put ribs on other side of grill, with no heat and use indirect heat and cook 2 hours 30 minutes. Also mix 3/4 c distilled white vinegar and juice of 2 lemons in a spray bottle. Approx 4-6 times over the cooking spray with juice. I TRIED THIS 07/10, FIRST TIME EVER TRIED RIBS. TURNED ABOUT PRETTY GOOD BUT NEED TO COOK EVEN LONGER, ALSO TOO MUCH DRY RUP SO TOO HOT FOR THE BOYS BUT THEY LIKED THEM OTHERWISE. ALSO MAYBE A LITTLE TOO MUCH JUICE SPRAY.

THE BEST BABY BACK RIBS

THE BEST BABY BACK RIBS image

Categories     Pork     Backyard BBQ

Yield 2 Servings

Number Of Ingredients 13

1 rack of pork baby back ribs.
Dry rub (you can use whatever spices you like, but
definitely don't leave out the brown sugar)
4 tablespoons brown sugar
1 tablespoon kosher salt
1/4-1/2 teaspoon black pepper
1 tablespoon garlic powder
1/2 tablespoon onion powder
1 tablespoon dried oregano
1/2 tablespoon or less of cayenne pepper (unless you
like it HOT)
1-2 tablespoons chili powder
mix it all up.

Steps:

  • Prep the ribs: ( I often do this the day before) On the back of the ribs will be a very thin but very tough membrane that you must remove. You can't really see it well, but trust me that it's there. I usually use a knife to pry up a corner of the membrane, then I just pull it down the entire length of the ribs. Sometimes it tears and you have to try a few times, but you definitely don't want to skip this step unless you want to deal with the membrane while you're EATING. Once the membrane is removed, put the dry rub all over the ribs (both sides) and rub it in. The meat will take on some of the colors in the dry rub and look a little reddish. Wrap the ribs in some heavy duty tin foil and let them hang out in the fridge til you're ready to cook them. Cook the ribs: At 250 degrees, place the ribs wrapped securely in tin foil onto a cookie sheet (sometimes juice/fat can escape the tin foil) and place them in the oven. cook for 2 hours. After 2 hours, pull them out and open the tin foil to take a look. At this point you can add a little apple juice on top of them, but that's not really necessary. Re-wrap them, and put them back in for another 1/2 hour. Pull them out again and open the tin foil completely. At this point you can brush some BBQ sauce on them, or leave them the way they are. Crank up the heat to 350 and put the ribs back in the oven with the tin foil open. After half an hour, they're done! You can always do this last part on a BBQ, but watch the ribs and make sure they don't burn from the sugar.

Tips:

  • Choose baby back ribs that are meaty and have a good amount of marbling.
  • Remove the membrane from the back of the ribs before cooking to help them cook more evenly.
  • Use a flavorful dry rub to coat the ribs before cooking. This will help them develop a delicious crust.
  • Cook the ribs low and slow over indirect heat until they are fall-off-the-bone tender.
  • Baste the ribs with a mixture of melted butter and honey or barbecue sauce during the last 30 minutes of cooking to add extra flavor.
  • Serve the ribs with your favorite sides, such as scalloped potatoes, coleslaw, or baked beans.

Conclusion:

These dry rub baby back ribs with scalloped potatoes are a delicious and easy-to-make meal that is perfect for any occasion. The ribs are fall-off-the-bone tender and full of flavor, and the scalloped potatoes are creamy and cheesy. This dish is sure to be a hit with your family and friends.
