APRICOT, ORANGE, CRANBERRY BREAD
Steps:
- Sift together the flour, baking powder, baking soda, and salt. Cream the butter and sugar in a large bowl. Beat in the orange zest and eggs, 1 at a time. Add the orange juice and milk and beat until mixed thoroughly. It will appear curdled.
- Add the flour mixture and beat until it is just moistened. Stir in the apricots, walnuts, and cranberries.
- Place baking rack in middle of the oven. Preheat the oven to 350 degrees F. Butter and flour five 5 3/4- by 2 1/4-inch loaf pans.
- Pour the batter into the pans. Bake for 45 minutes. Test for doneness with a toothpick - it should come out clean. Remove the bread from the pans, transfer to a wire rack, and let them cool on their sides.
DRIED BLUEBERRY, CRANBERRY OR APRICOT BANANA NUT BREAD
This recipe was found in Better Homes and Gardens Cook Book. I've used it for years, adjusting it to my specific tastes. I use either dried blueberries, or cranberries. I have only once used dried apricots, diced. It's fabulous either way, any way.

- preheat oven to 350degrees.
- grease bottom and 1in up the sides of TWO bread 7 1/2x3 1/2x2in bread pans; set aside.
- combine flour, baking powder, baking soda, cinnamon and nutmeg.
- in a medium mixing bowl, or food processor, combine eggs, bananas, sugar and butter. (I use I Can't Beleive It's Not Butter). Mix for 30 seconds.
- fold in nuts of your choice.
- spoon batter into prepared pans.
- bake at 350 for 40-45minutes, or until a toothpick inserted in the center of bread comes clean.
- cool in pan on a wire rack for 10minutes. remove from pan. cool completely on a wire rack and enjoy.

This is so good and reminds me of a real moist kind of a sweet quick bread. Everybody asks for the recipe: this bread is moist, and easy to make too. Note: If you are using frozen blueberries, you can thaw them in the microwave for about 3 minutes. However, you need to increase the amount of blueberries to 3/4 cup.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan.
- In a medium bowl, toss blueberries in 2 tablespoons flour. Gently stir blueberries together with oats, nuts, 1 1/2 cups flour, baking soda, and salt.
- In a large bowl, cream shortening. Gradually add sugar, beating until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in mashed banana. Add blueberry mixture to creamed mixture, and stir just until moistened. Spoon batter into the prepared pan.
- Bake in preheated oven until a wooden toothpick comes out clean when inserted in the center of the loaf, 50 to 55 minutes. Cool in pan for 10 minutes. Remove from pan, and cool completely on a wire rack.

- Preheat oven to 375°F.
- Grease two standard size loaf pans.
- Mix cranberries, blueberries and granulated sugar together in saucepan, cooking over medium heat and stirring until sugar is dissloved.
- Remove from heat and set fruit aside to cool.
- Mix brown sugar and butter in mixing bowl and beat until blended. Add eggs and beat well.
- Stir in buttermilk.
- Mix flour, baking soda, baking powder and salt in a bowl and stir until well mixed.
- Add to butter mixture and stir until just blended.
- Stir in fruit and sugar mixture.
- Spoon batter into greased loaf pans.

- In a small saucepan, cook the apricots in water until soft; drain.
- Preheat oven to 350 degrees.
- Generously grease and lightly flour two 7x3x2-inch loaf pans.

- In a bowl, sift the first 4 ingredients; set aside.
- Mix the next 4 ingredients together in another bowl.
- Fold flour mixture with orange juice mixture, then stir in bananas, cranberries and nuts.
