Yield 4 servings

Number Of Ingredients 9

8 ounces young spinach
2 large eggs
8 pieces thick-sliced bacon, chopped
3 tablespoons red wine vinegar

1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
4 large white mushrooms, sliced

  • Transfer the fat to a small saucepan set over low heat and whisk in the red wine vinegar, sugar and Dijon mustard. Season with a small pinch each of kosher salt and black pepper.
  • Add the mushrooms and the sliced onion to the spinach and toss. Add the dressing and bacon and toss to combine. Divide the spinach between 4 plates or bowls and evenly divide the egg among them. Season with pepper, as desired. Serve immediately.

SPINACH SALAD DRESSING

Spinach Salad Dressing image

My ex-wife developed this recipe about 30 years ago, but it has been modified many times over the years due to changing tastes and the availability of ingredients. Decrease olive oil by half, and increase spices and hot sauce to make a great marinade for grilling meat and veggies. Prep time does not include time for designing and building your salad... just for making the dressing.

Provided by Toby Jermain

Categories     Salad Dressings

Time 10m

Yield 1 cup, 2-3 serving(s)

Number Of Ingredients 12

1/2 medium onion, finely chopped
1/4 cup cider vinegar
2 tablespoons distilled white vinegar, for 'bite'
1 tablespoon sugar, to taste (originally had 1/4 cup. but that's way to sweet for me now)
1 teaspoon salt
1/2 teaspoon garlic granules
1/4 teaspoon fresh ground black pepper, to taste
1/2 teaspoon sweet paprika
1/2 teaspoon dry mustard
1/2 teaspoon celery salt
1/2 teaspoon sriracha sauce (preferred) or 1/4 teaspoon Tabasco sauce, to taste
1/2 cup extra virgin olive oil

Steps:

  • Combine all ingredients in a jar, except olive oil, and shake thoroughly to mix.
  • Allow to set at room temperature for 30 minutes, shaking occasionally, add olive oil, shake again, and refrigerate until needed, but at least 1 hour.
  • Shake and toss with spinach salad (spinach, hard-boiled egg, sliced fresh mushrooms, real crisp bacon bits, croutons, etc.) or other greens.
  • Note: Use the Sriracha hot sauce if you can find it.
  • It adds a lot of flavor, not just heat!

Tips for Making the Best Spinach Salad Dressing:

  • Use fresh ingredients: The fresher the ingredients, the better the dressing will taste. This is especially true for herbs, which can lose their flavor quickly.
  • Balance the flavors: A good dressing should have a balance of sweet, sour, salty, and bitter flavors. If one flavor is too strong, it can overwhelm the others.
  • Start with a small amount of dressing and add more as needed: It's easy to add more dressing, but it's hard to take it away. Start with a small amount and add more until you reach the desired flavor.
  • Emulsify the dressing: This means whisking the ingredients together until they are smooth and creamy. This will help the dressing to adhere to the salad greens.
  • Let the dressing sit for a few minutes before using: This will allow the flavors to meld together and develop.
  • Store the dressing in a jar or container with a tight-fitting lid: This will help to preserve the flavor and freshness of the dressing.

Conclusion:

With so many delicious and versatile dressings to choose from, you're sure to find the perfect one to complement your spinach salad. Whether you prefer a creamy dressing, a vinaigrette, or something in between, there's a dressing out there that will make your salad shine. So experiment and have fun! The possibilities are endless.
