Time 20m

Yield 2 to 4 servings

Number Of Ingredients 13

2 heads broccoli, trimmed into florets and steamed for 4 to 5 minutes
2 tablespoons sherry vinegar
1 tablespoon light brown sugar
1/2 teaspoon red chili flakes
1/4 cup extra-virgin olive oil
2 large cloves garlic, thinly sliced
4 to 5 long strips lemon peel
1 teaspoon salt
1/4 cup olive oil
2 cloves garlic, smashed and thinly sliced
2 long, wide strips lemon peel
1 lemon, juiced
Salt and about 10 grinds freshly ground pepper

Steps:

  • Divide the cooked broccoli into 2 serving bowls.
  • In a small bowl, whisk together the vinegar, brown sugar, and chili flakes until the sugar has dissolved. Set aside.
  • Heat the olive oil in a large skillet over medium heat. Add the garlic and lemon peel and cook briefly until beginning to turn golden brown, about 1 1/2 to 2 minutes. Add the vinegar mixture and salt and simmer 2 minutes longer.
  • Pour dressing over half the broccoli florets and serve immediately.
  • Heat the olive oil, garlic, and lemon peel over medium heat and let sizzle gently for a few minutes until garlic is lightly browned. Add lemon juice, salt, and pepper and heat for another minute. Pour dressing over half the broccoli florets and serve immediately.

Tips:

  • Choose the right broccoli: Look for broccoli crowns that are deep green in color with tightly closed florets. Avoid crowns that are yellowing or have open florets.
  • Wash the broccoli thoroughly: Rinse the broccoli under cold water to remove any dirt or debris.
  • Cut the broccoli into bite-sized florets: Use a sharp knife to cut the broccoli into 1-inch florets.
  • Blanch the broccoli: Blanching the broccoli helps to preserve its color and nutrients. To blanch the broccoli, bring a large pot of salted water to a boil. Add the broccoli florets and cook for 2-3 minutes, or until they are bright green and tender-crisp. Drain the broccoli in a colander and then plunge it into a bowl of ice water to stop the cooking process.
  • Marinate the broccoli: Marinating the broccoli in a flavorful dressing helps to add flavor and moisture. To marinate the broccoli, combine the broccoli florets with your desired dressing in a bowl. Cover the bowl and refrigerate for at least 30 minutes, or up to overnight.
  • Cook the broccoli: You can cook the broccoli in a variety of ways, including sautéing, roasting, or grilling. To sauté the broccoli, heat a large skillet over medium heat. Add the broccoli and cook, stirring occasionally, until it is tender-crisp, about 5-7 minutes. To roast the broccoli, preheat the oven to 425 degrees Fahrenheit. Toss the broccoli with olive oil and salt and pepper. Spread the broccoli on a baking sheet and roast for 15-20 minutes, or until it is tender-crisp. To grill the broccoli, preheat your grill to medium-high heat. Brush the broccoli with olive oil and salt and pepper. Grill the broccoli for 5-7 minutes per side, or until it is tender-crisp.
  • Serve the broccoli: Broccoli can be served as a side dish or main course. It can also be added to salads, soups, and stir-fries.

Conclusion:

Broccoli is a versatile and delicious vegetable that can be enjoyed in many different ways. By following these tips, you can prepare broccoli that is both flavorful and nutritious. So next time you're looking for a healthy and delicious side dish, give dressed-up broccoli a try.
