'DRESSED' CUCUMBER

'Dressed' Cucumber image

A Barbadian spin on cucumber salad, almost always served as a side dish with main meals. Also used (with the addition of parsley and a touch of allspice) as the 'pickle' in 'soused' meats (pork, lamb, beef/oxtails, chicken). Fresh lime juice is the key to this delicious salad.

Tips:

  • Choose the right cucumbers: Look for firm, unwaxed cucumbers with deep green skin. Avoid cucumbers with yellow or pale spots, as these may be bitter.
  • Slice the cucumbers thinly: This will help them absorb the dressing more easily.
  • Use a sharp knife: This will help you get clean, even slices.
  • Make the dressing ahead of time: This will give the flavors time to meld.
  • Chill the cucumbers before serving: This will make them even more refreshing.
  • Garnish with fresh herbs: This will add a pop of color and flavor to your dish.

Conclusion:

Dressed cucumbers are a refreshing and versatile dish that can be enjoyed as an appetizer, side dish, or snack. With a few simple ingredients and a little bit of time, you can create a delicious and healthy dish that will impress your friends and family.
