1 package (16 ounces) Nutter Butter cookies, divided
1/4 cup butter, melted
1 package (3.90 ounces) instant chocolate pudding mix
1-1/2 cups 2% milk
4 ounces cream cheese, softened
1/2 cup confectioners' sugar
1/3 cup crunchy peanut butter
1 carton (8 ounces) frozen whipped topping, thawed
1/4 cup milk chocolate chips
1/4 cup peanut butter chips

Steps:

  • Preheat oven to 350°. In a large bowl, finely crush 24 of the cookies; stir in melted butter. Press onto the bottom of an ungreased 9-in. square baking pan. Bake until lightly browned, about 10 minutes. Cool completely., In a small bowl, whisk pudding mix and milk until smooth; spread over cooled crust. In another small bowl, beat cream cheese, powdered sugar and peanut butter. Fold in 1 cup whipped topping. Spoon cream cheese mixture over pudding; gently spread to cover pudding. Spread remaining whipped topping over cream cheese layer. Cover and refrigerate for at least 2 hours. , Coarsely crush remaining 8 cookies. Sprinkle crushed cookies and chips over whipped topping before serving.

Perfect Old Fashioned Pinto Beans with a LOAD of flavor! Just know, if you are sensitive to salt, you can decrease the salt for cooking and add at the end.

1 16 oz bag of pinto bean
2 tsp olive oil
1 small yellow onion - diced
2 cloves garlic - minced
4 slices of thick cut applewood smoked bacon
1 tsp salt (less if you are sensitive)
4 tsp chicken broth concentrate
1 bay leaf
1 tsp granulated white sugar

Steps:

  • Rinse the bag of beans well and remove any that look like they are past their prime. If unsure - chuck it.
  • Pour the beans into a large bowl and cover with at least 2 inches of water and allow to soak overnight. Alternately, you can boil the beans at a steady boil for about 10 minutes before you begin to cook them. Whether you soak or parboil, pour the water off from this step.
  • In a six quart stock pot on medium heat, heat the olive oil and saute the onion and garlic until they smell really good and the pieces become translucent.
  • Remove the pot from the heat and add the beans, bacon, salt, chicken broth concentrate, one bay leaf and sugar and enough cool clean water to cover the beans by 2 inches. (If you are sensitive to salt, then you can always decrease the amount)
  • Heat the beans on medium until they come to a light boil then reduce the heat to low.
  • Stir the beans occasionally and don't let them get to a strong boil. Cook until done. I tell doneness by tasting - you could also spoon some out and smash it in your fingers. If it is smashy- through and through - they are done.

Yep - southern-cooked Pinto's with one of our favorites - Peanut Butter! Top of stove or Crock Pot - Both turn out excellent! A little different but really good! I'm a real southerner but not too southern to try a new variety of something...

2 lb fresh pinto beans (dry) picked & washed in cold water
1/4 lb salted side meat/ fat back/ hamhocks
2 qt water (more or less depending whether using crock pot)
1/4 c peanut butter (smooth)
1 1/2 tsp salt
1/4 c canola oil
3 Tbsp granulated sugar
1 Tbsp black pepper, ground

Steps:

  • 1. Place beans in crock pot, cover with water (about 4 inches to cover), add all ingredients minus sugar and peanut butter. Adjust crock pot to cook overnite on Low for 8 hours. If using stovetop method cook beans as in recipe as usual. You will need to replenish water often as necessary and keep heat adjusted to medium.
  • 2. During the last hour of cooking (stove top method)add sugar and peanut butter stirring well. Lower heat and continue stove top cooking method for remaining 1 hour.
  • 3. ps - Using crockpot to cook beans I add the sugar and peanut butter after they finish cooking and stir well while they are still hot. Enjoy! Another favorite for fried cornbread!

1 cup butter, melted
1 cup brown sugar
1 teaspoon baking soda
2 1/4 cups quick cooking oatmeal (not instant)
1 1/2 cups flour
1 teaspoon salt
1/2 cup peanut butter (I used creamy)
1 can sweetened condensed milk
1 King size Reese's Peanut Butter Cup candy bars, roughly chopped
1 cup milk chocolate chips

Steps:

  • Preheat oven to 350°F. Line a 9×13-inch pan with tin foil and spray with Pam. In a medium mixing bowl, mix the melted butter, sugar, soda, oatmeal, flour & salt until it becomes a crumbly texture and set aside a little more than 1 cups worth of the crust mixture. Press the remaining crust into your prepared pan. Bake for 10 minutes. While the crust is cooking, in a small bowl, stir the peanut butter and sweetened condensed milk together. Once the crust has baked, pour and spread peanut butter filling over the baked crust in an even layer. Be careful not to pull up the warm crust while spreading your mixture. Evenly sprinkle the reserved crumbs on top of the peanut butter and sweetened condensed milk mix. Bake at 350°F for about 15 minutes. After 15 minutes, remove from oven and sprinkle the chopped candy bars and chocolate chips on top. Return to the oven and bake for another 5 to 10 minutes or until topping is light golden brown and the chocolate chips and bars are melting. Allow to cool before cutting and serving. Enjoy!

This old fashioned recipe was served to us in our school cafeteria's and is now found on almost every counter of every convenient store in the world - BUT none will taste better than your own. The older name aka if "Boiled Cookies" - odd but the same good...

2 c granulated sugar
4 Tbsp cocoa
1/2 c milk
1/4 c butter or margarine
2 1/2 c oatmeal (no instant or quick cook)
1/2 c peanut butter, crunchy
2 tsp vanilla extract, pure

Steps:

  • 1. Combine butter in large saucepan and allow to start melting. Combine sugar and cocoa. Mix well. Add to butter above and gradually add in milk.
  • 2. Allow to cook on med high heat, stirring. Allow to come to a full boil. Boil 3 minutes. Remove from heat. Add in oatmeal, peanut butter and vanilla. Mix well until peanut butter is melted.
  • 3. Lay out sheets of waxed paper. Working quickly Drop or make patties of mixture on wax paper and allow to cool. Store in air tight containers if any left once they cool! Enjoy! You will need another batch and they won't last very long!

1 container (8 oz) frozen whipped topping, thawed
1 bag (9 oz) Reese's peanut butter cups miniatures, chopped
1/4 cup creamy peanut butter
1/4 cup milk
2 tablespoons sugar
3 oz bittersweet baking chocolate, melted
1 cup unsalted dry-roasted peanuts

Steps:

  • Heat oven to 350°F. In large bowl, stir cookie base ingredients until soft dough forms. Spread dough in bottom of ungreased 13x9-inch pan. Bake 12 to 15 minutes or just until set. Cool completely, about 30 minutes.
  • In large bowl, beat cream cheese and 1/4 cup sugar with electric mixer on medium speed until smooth. Fold in whipped topping and candies. Spread over cooled cookie base.

2 teaspoons baking soda
1/4 teaspoon salt

1/2 cup granulated sugar
1 cup firmly packed brown sugar
2 eggs

Steps:

  • Ground oat flour: Place 1 to 1 1/2 cups oatmeal (quick or old-fashioned) in blender or food processor.
  • Blend or process for about 60 seconds.
