Cook time doesn't include the 1-3 hours marinating time in the 'fridge. This makes a great meal with rice and a cooked vegetable or salad.

1 cup sake (Japanese rice wine)
1/2 cup natural soy sauce or 1/2 cup tamari, reduced sodium preferred
1 tablespoon fresh gingerroot, grated
2 fresh garlic cloves, smashed
1 tablespoon dark brown sugar
4 salmon fillets (6 ounces per person)
1 lemon, divided into wedges (optional)

Steps:

  • Combine all marinade ingredients.
  • Rinse salmon fillets under cold water, place in a glass or ceramic dish, and pour the marinade over. Cover and place in the refrigerator for 1-3 hours, basting with the marinade once or twice.
  • Prepare the grill or preheat the broiler to high heat.

2 tablespoons dark brown sugar
4 teaspoons Dijon mustard
1 tablespoon soy sauce
1 teaspoon rice vinegar
2 medium size salmon fillets

Steps:

  • Preheat oven to broil
  • Mix glaze ingredients together.
  • Clean and de-bone salmon.
  • Coat one side of the salmon with the glaze. Place on a baking sheet.
  • Broil salmon within 8-10 inches of the coils, be careful not to get too close you don't want it cooking too fast.
  • It is done when it opaque and flakes easily in the center.

This delightful recipe appeared in one of DH's business magazines. It is both easy and delicious. Coating the salmon with mayonnaise before broiing keeps it moist and imparts wonderful flavor. You can use low-fat mayonnaise in this recipe. The recipe also works with swordfish, tuna, or halibut steaks. Steaks are preferred over fillets as they have an even thickness making for even cooking.

4 tablespoons mayonnaise
1 tablespoon Dijon mustard
1 teaspoon paprika
4 salmon steaks, 1 inch thick

Steps:

  • Preheat broiler.
  • Whisk together mayonnaise, mustard, and paprika in a bowl. Smear almost one-half on one side of salmon lightly.
  • Broil salmon about 3 inches from flame for 4 minutes.
  • Turn steaks and smear rest of dressing mixture on them. This coating should be a bit heavier than that on the other side. Broil for another 4 minutes.
  • NOTE: Don't be afraid to substitute other mustards for the Dijon. I found a mustard with dill that works perfectly. I also like the Jack Daniels mustard. Or substitute 1/2 teaspoon dry mustard with lemon pepper for the paprika.

1 tablespoon reduced sodium soy sauce
1 tablespoon fresh ginger, minced
1 tablespoon rice wine vinegar
16 ounces salmon fillets

Steps:

  • In a shallow glass dish, combine sesame oil, soy sauce, ginger and vinegar.
  • Add salmon and turn to coat all sides. Refrigerate for 30 to 60 minutes, turning occasionally. Preheat the grill to medium-high heat.
  • Lightly oil the grill and place the salmon on the grill. Grill about 5 minutes per side. Test for doneness by placing a knife blade into the center to see if the pink flesh has become opaque.

When I made this I used too small a pan to take all the vegetables and the salmon, so the tops of my salmon were not covered in liquid; this worked for us because DH is a sashimi connoisseur so he went for the least done piece. I also was surprised to discard the vegetables! I nibbled on the delicious carrot slices, though! And yes, this is an easy dish and the salmon came out just great! :)

4 salmon fillets (6 ounces per person)
1 carrot, sliced
1 small onion, sliced
1 stalk celery, sliced
2 slices lemons
3 sprigs parsley
6 bay leaves (Turkish if possible)

1 cup dry white wine
1/2 lemon, juiced (i.e., juice of 1/2 lemon)

Steps:

  • Place carrot, onion, celery, lemon, parsley, and bay leaves (if using California bay leaves, just use half a large leaf) in saucepan.
