DOUBLE TOMATO & BRIE SANDWICHES

Double Tomato & Brie Sandwiches image

I got this recipe out of Good Housekeeping Magazine years ago. It has been a hit every time I make it. Great for any picnic or gathering plain or fancy. Please note that cook time is refrigeration time. Also, this makes 16 main dish servings, but you can slice smaller and serve as an appetizer.

Time 1h35m

Yield 16 serving(s)

Number Of Ingredients 7

1 (6 1/2 ounce) jar sun-dried tomatoes packed in oil, drained and finely chopped
2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
2 (8 ounce) long loaves Italian bread
1 lb brie cheese, sliced (with rind left on)
4 -6 roma tomatoes, sliced
1 cup packed fresh basil leaf

Steps:

  • In small bowl, combine dried tomatoes, olive oil and vinegar.
  • Cut each loaf of Italian bread horizontally in half.
  • Evenly spread dried tomato mixture on cut sides of bread.
  • Arrange Brie on bottom halves of both loaves and top with tomato slices and basil leaves.
  • Replace tops of loaves.
  • Slice each loaf into eight pieces.
  • Wrap in plastic wrap and refrigerate until ready to serve.
  • Note: I think this sandwich tastes best when allowed to sit in the refrigerator for about an hour or so for all the flavors to blend well.
  • Also, I like the sun-dried tomatoes packed in lightly salted olive oil and herbs.
  • If you use the unseasoned variety, you may want to lightly salt the tomatoes.

Time 10m

Yield 2 serving(s)

Number Of Ingredients 6

2 tablespoons mayonnaise
2 teaspoons chopped fresh basil
4 slices white bread, toasted
4 ounces brie cheese, cut into 1/4 inch thick slices
2 leaves leaf lettuce
1 tomatoes, sliced (used good, ripe, juicy tomatoes)

Steps:

  • Combine mayonnaise and basil and spread the mixture on one side of each bread slice.
  • On 2 of the bread slices, mayo side up, layer cheese, lettuce and tomato; top with the remaining bread slices, mayo side down.

Tips:

  • When choosing tomatoes for your sandwich, look for ripe, juicy ones that are free of blemishes. You want tomatoes that are flavorful and will add a lot of moisture to the sandwich.
  • To get the most flavor out of your tomatoes, slice them thinly and season them with salt and pepper before assembling the sandwich.
  • Use a good quality Brie cheese that is nice and creamy. Brie that is too hard will be difficult to spread and will not melt as well.
  • If you are using a baguette, slice it in half lengthwise and then toast it lightly. This will help the sandwich to hold together better and will also add a nice crunch.
  • Be generous with the basil leaves. Basil adds a wonderful flavor to the sandwich and also helps to brighten up the colors.
  • Serve the sandwich immediately after assembling it. This will help to prevent the bread from getting soggy.

Conclusion:

The Double Tomato Brie Sandwich is a simple but delicious sandwich that is perfect for a quick lunch or dinner. It is made with just a few fresh ingredients and is sure to please everyone at the table. So next time you are looking for a new sandwich to try, give this one a try. You won't be disappointed!
