ORANGE GLAZED BLUEBERRY SCONES

Orange Glazed Blueberry Scones image

Provided by Tyler Florence

Categories     dessert

Time 1h

Yield 6 to 12 scones

Number Of Ingredients 11

2 cups unbleached flour, plus more for rolling berries
1 tablespoon baking powder
1 teaspoon salt
1/3 cup sugar
1/4 cup unsalted butter, chilled and cut in chunks
3/4 cup buttermilk or cream
1 egg
1 pint fresh blueberries
2 tablespoons unsalted butter
2 cups powdered sugar, sifted
2 oranges, juiced and zested

Steps:

  • Preheat oven to 400 degrees F.
  • In a large bowl, sift together flour, baking powder, salt and sugar; mix thoroughly. Cut in butter using 2 forks or a pastry blender. The butter pieces should be coated with flour and resemble crumbs.
  • In another bowl, mix buttermilk and egg together, and then add to the flour mixture. Mix just to incorporate, do no overwork the dough.
  • Roll blueberries in flour to coat, this will help prevent the fruit from sinking to the bottom of the scone when baked. Fold the blueberries into batter, being careful not to bruise. Drop large tablespoons of batter on an ungreased cookie sheet.
  • Bake for 15 to 20 minutes until brown. Cool before applying the orange glaze.
  • To prepare Orange Glaze: combine butter, sugar, orange zest, and juice over a double boiler. Cook until butter and sugar are melted and mixture has thickened. Remove from heat and beat until smooth and slightly cool. Drizzle or brush on top of scones and let glaze get hazy and hardened.

Tips for Baking Double Orange Scones with Orange Butter:

  • Use fresh oranges for optimal flavor: Fresh oranges provide the best flavor for both the scones and the orange butter. If possible, use organic oranges to avoid any pesticides or chemicals.
  • Zest the oranges finely: Finely zesting the oranges ensures that the orange flavor is evenly distributed throughout the scones. Use a microplane grater or a fine grater to achieve this.
  • Don't overmix the dough: Overmixing the dough can result in tough scones. Mix the dough just until it comes together and avoid overworking it.
  • Chill the dough before baking: Chilling the dough before baking helps to develop the flavor and texture of the scones. This step also makes it easier to handle and shape the dough.
  • Use cold butter for both the scones and the orange butter: Cold butter is essential for creating flaky scones. Make sure the butter is chilled and cut into small pieces before adding it to the dough.
  • Bake the scones until they are golden brown: The scones should be baked until they are golden brown on top. This ensures that they are cooked through and have a crispy exterior.
  • Make the orange butter while the scones are baking: This allows the butter to soften slightly, making it easier to mix. You can also make the orange butter ahead of time and store it in the refrigerator until ready to use.
  • Serve the scones warm with orange butter: Freshly baked scones are best served warm with a generous dollop of orange butter. You can also add a dollop of whipped cream or a drizzle of honey for extra flavor.

Conclusion:

Double Orange Scones with Orange Butter is a delightful treat that combines the bright citrus flavor of oranges with a flaky, buttery texture. By following these tips, you can create scones that are bursting with orange flavor and perfect for any occasion. Whether you enjoy them for breakfast, brunch, or as a snack, these scones are sure to satisfy your cravings.
