Time 25m

Number Of Ingredients 12

2 cups quartered strawberries, divided
2 tablespoons balsamic vinegar
¼ teaspoon salt plus 1/8 teaspoon, divided
½ teaspoon ground pepper, divided
3 tablespoons extra-virgin olive oil
1 tablespoon ketchup
1 tablespoon strawberry preserves
1 pound chicken tenders
1 (5 ounce) package baby spinach
½ cup sliced almonds, toasted
½ cup crumbled feta cheese
½ cup torn fresh basil leaves

Steps:

  • Preheat grill to medium-high.
  • Combine 1 cup strawberries, vinegar and 1/4 teaspoon each salt and pepper in a blender. Blend until smooth. With the motor running, slowly drizzle in oil. Transfer 1/2 cup of the vinaigrette to a large bowl. Add ketchup and preserves to the blender and pulse until smooth.

Transfer to a plate and let rest for 5 minutes.
  • Add spinach, almonds, feta, basil and the remaining 1 cup strawberries to the vinaigrette; toss to combine. Serve the salad topped with the chicken.

Yield Makes 4 servings

Number Of Ingredients 9

1 10.5-ounce jar marinated feta cheese cubes in oil with herbs and spices
2 tablespoons chopped fresh oregano
2 tablespoons red wine vinegar
4 skinless boneless chicken breast halves
1 large red onion, peeled, cut through root end into 1/2-inch wedges
1 5-ounce package baby spinach leaves
1 pound tomatoes (preferably heirloom) in assorted colors, cut into wedges
1 9-ounce container teardrop tomatoes
1/2 cup halved pitted Kalamata olives

Steps:

  • Prepare barbecue (medium-high heat). Drain oil from feta into glass measuring cup. Whisk in oregano. Transfer 1/2 cup oil mixture to small bowl; whisk in 2 tablespoons vinegar. Season dressing with salt and pepper (reserve remaining oil mixture for brushing).
  • Brush chicken and onion wedges with reserved oil mixture; sprinkle with salt and pepper. Grill chicken until cooked through, 7 to 8 minutes per side, and onion until tender, 3 to 4 minutes per side. Transfer to cutting board; let rest 5 minutes.
  • Meanwhile, arrange spinach on large platter. Combine all tomatoes, olives, and feta in large bowl. Toss with enough dressing to coat generously. Season with salt and pepper. Arrange on platter with spinach.
  • Thinly slice chicken; arrange chicken and onion wedges on platter. Drizzle chicken and spinach with more dressing and serve.

Tips:

  • Use fresh ingredients: Fresh spinach, chicken, and feta cheese will give your salad the best flavor.
  • Don't overcook the chicken: Overcooked chicken will be dry and tough. Cook it until it is just cooked through, about 8 minutes per side.
  • Use a good quality feta cheese: Feta cheese that is made with real sheep's milk will have a richer flavor than feta cheese made with cow's milk.
  • Toast the walnuts: Toasting the walnuts will bring out their flavor and make them more crunchy.
  • Use a light dressing: A light dressing will help to keep the salad from being too heavy.
  • Serve the salad immediately: This salad is best served immediately after it is made, as the spinach will start to wilt if it sits for too long.

Conclusion:

This double-duty chicken, feta, and spinach salad is a delicious and easy-to-make salad that is perfect for a light lunch or dinner. It is packed with protein, healthy fats, and vitamins, and it is sure to please everyone at your table. This salad also reheats well, making it a great option for meal prep. Whether you are looking for a quick and easy weeknight meal or a healthy salad to bring to a potluck, this double-duty chicken, feta, and spinach salad is the perfect choice.
