4 cups cake flour, divided
2 teaspoons baking powder, divided
1 teaspoon baking soda, divided

3 1/2 cups granulated sugar, divided
8 large eggs, separated
2 teaspoons vanilla extract, divided

For the Vanilla Syrup:
1/4 cup granulated sugar
1 vanilla bean, split lengthwise
For the Orange Cream-Cheese Frosting:

  • Bake the Buttermilk Cake:
  • Place a rack in middle of oven; preheat to 350°F. Lightly coat cake pans with nonstick spray and line bottoms with parchment paper. Whisk 2 cups flour, 1 tsp. baking powder, 1/2 tsp. baking soda, and 1/4 tsp. salt in a medium bowl; set aside.
  • Using an electric mixer on medium-high speed, beat 3/4 cup butter and 1 1/2 cups granulated sugar in a large bowl, scraping down sides of bowl as needed, until light and creamy, about 5 minutes. Add 4 egg yolks in 2 additions, scraping down bowl after each. Beat in 1 tsp. vanilla.
  • Reduce mixer speed to low, then add dry ingredients in 2 additions alternately with 1 cup buttermilk in 2 additions, scraping down sides of bowl as needed.
  • Using electric mixer on medium speed, beat 4 egg whites in another large bowl until soft peaks form, 2-3 minutes. Slowly add 1/4 cup granulated sugar and continue to beat until stiff, glossy peaks form, about 3 minutes more. Fold half of the egg whites into flour mixture, then gently fold in remaining egg whites.
  • Scrape batter into prepared pan; smooth surface. Bake, rotating pan halfway through and covering with foil during the last 15 minutes of baking, until golden brown, firm to the touch, and a tester inserted into the center comes out clean, 45-50 minutes. Transfer pan to a wire rack and let cake cool.
  • Repeat steps with second prepared pan and remaining cake ingredients to bake the second layer.
  • Make the Vanilla Syrup:
  • Combine granulated sugar and 1/4 cup water in a medium saucepan. Scrape in vanilla seeds, add pod, and stir to combine. Bring to a boil, cover, and steep at least 15 minutes. Set aside to cool. Discard pod before using.
  • Make the Orange Cream-Cheese Frosting:
  • Using electric mixer on medium-high speed, beat cream cheese and butter in a large bowl until smooth, about 1 minute. Beat in orange zest, orange juice, and vanilla. Reduce mixer speed to medium and beat in powdered sugar, scraping down bowl as needed, until light and fluffy, 2-3 minutes.
  • Assemble the cake:
  • Spread 1 Tbsp. frosting in the center of a platter. Place 1 cake layer, top side down, in the center. Using a pastry brush, brush 3 Tbsp. vanilla syrup over top of cake. Using an offset spatula, spread 1 cup frosting evenly over top. Arrange 6 oz. raspberries in a ring around perimeter of cake, pressing to adhere. Fill interior of ring with 6 oz. raspberries. Spread 1 cup frosting over raspberries inside of ring (do not frost raspberries at the perimeter).
  • Carefully place second cake layer, top side down, on frosted raspberries, gently pressing down to secure. Brush 3 Tbsp. syrup over top of cake with pastry brush. Spread 2 1/2 cups frosting evenly over top and sides, carefully covering raspberries. Chill at least 30 minutes to let frosting set.
  • Remove cake from refrigerator. Frost top and sides, swirling decoratively, making sure to cover bottom of platter; reserve remaining frosting for another use. Chill at least 30 minutes or up to overnight to let frosting set. Before serving, top cake with remaining 3 oz. raspberries and edible flowers, if using.

  • Cake can be made 3 days ahead; wrap tightly in plastic and chill, or freeze up to 2 weeks. Syrup can be made 5 days ahead; store in an airtight container and chill. Frosting can be made 3 days ahead; cover with plastic wrap, pressing directly on surface, and chill. Bring to room temperature before using.

Cookie crumbs, your choice

Hot fudge
Butter, for greasing pan, plus 16 tablespoons (2 sticks) butter, melted, divided
1 (18.25-ounce) package chocolate cake mix
3 eggs, divided
1 (8-ounce) package cream cheese, softened
3 to 4 tablespoons cocoa powder
1 (16-ounce) box powdered sugar
1 teaspoon vanilla extract
1 cup chopped nuts

Steps:

  • Cut Ooey Gooey Butter Cake into bite-sized pieces, adding it to chocolate ice cream.Crumble your choice of cookies and add to the ice cream while adding your choice of nuts. Add hot fudge to your desire and mix together.
  • Preheat oven to 350 degrees F. Lightly butter a 13 by 9-inch baking pan.
  • In a large bowl, combine the cake mix, 1 egg, and 8 tablespoons (1 stick) melted butter, and stir until well blended. Pat mixture into prepared pan and set aside. In a stand mixer, or with a hand mixer, beat the cream cheese until smooth. Add the remaining 2 eggs, and the cocoa powder. Lower the speed of the mixer, and add the powdered sugar. Continue beating until ingredients are well mixed. Slowly add the remaining 8 tablespoons (1 stick) of melted butter, and the vanilla, continuing to beat the mixture until smooth. Stir in nuts with a rubber spatula. Spread filling over cake mixture in pan.
  • Bake for 40 to 50 minutes. Be careful not to overcook the cake; the center should still be a little gooey when finished baking. Let cake partially cool on a wire rack before cutting into pieces.

1 1/2 cups cold heavy cream
3 tablespoons coffee-flavored liqueur (recommended -- Kahlua)

Steps:

  • Heat oven to 375 degrees F, arrange rack in upper third, and place a baking sheet on rack while oven heats.
  • Peel 1 banana and place in a blender with milk, egg yolks, cornstarch, sugar, vanilla, and salt and process until smooth. 7 to 8 tablespoons ice water
1 1/2 cups cold heavy cream

  • Heat oven to 375 degrees F, arrange rack in upper third, and place a baking sheet on rack while oven heats.
  • Meanwhile, roll dough on a lightly floured surface to a 12-inch diameter circle approximately 1/8-inch thick. Transfer dough to a 9 1/2-inch pie dish and trim edges so there is a 1/2-inch overhang. Use excess dough to press crust into pie plate. It will go from being a shaggy mess to coming together. Dough is moist enough when it is moistened through but is not wet when pressed. (Do not overwork the dough or it will become tough.)
  • While rotating the bowl with 1 hand, push dough between other palm and side of bowl to gather into a ball. Turn dough onto a piece of plastic wrap, press it into a flat disk, then close in wrap. Place in coldest part of refrigerator (usually back bottom shelf) at least 30 minutes before rolling out and forming into a crust.
  • Yield: about 1 pound dough (enough for 1 (9 to 10-inch pie dish))

2 tablespoons all-purpose flour
3 tablespoons buttermilk
1 egg yolk
1/2 teaspoon vanilla extract
3 tablespoons unsalted butter, melted and cooled
2 tablespoons unsweetened cocoa powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1/3 cup sugar
6 ounces milk chocolate, finely chopped (1 cup)
3 ounces bittersweet chocolate (1/2 cup) or 3 ounces semisweet chocolate, finely chopped (1/2 cup)
1/4 cup sour cream, plus
3 tablespoons sour cream, at room temperature
1 pinch salt

Steps:

  • Preheat the oven to 325°F.
  • Grease and flour the insides of two 14-14.5 ounce cans.
  • Place the cans on a baking sheet, and set aside.
  • Whisk the buttermilk, egg yolk, and vanilla together in a small bowl.
  • Gradually pour the melted butter into the buttermilk mixture, whisking constantly.
  • Sift the flour, cocoa powder, baking soda, and salt into a medium-size mixing bowl; add sugar, and then whisk to blend well.
  • Add the buttermilk mixture and whisk just until the dry ingredients are moistened.
  • Divide the batter between the prepared cans.
  • Bake the cakes until a toothpick inserted into the center comes out clean, 25 to 30 minutes.
  • Place the cans to a wire rack to cool for 15 minutes.
  • Run a knife around the edge of each can and invert them to release the cakes.
  • Turn the cakes upright and let them cool completely on the rack.
  • Meanwhile, make the frosting: Place chocolate in the top of a double boiler set over simmering water, and heat, stirring occasionally, until melted. (May also do this in the microwave.).

4 large egg yolks
4 tablespoons unsalted butter, cut into tablespoons
1 cup sweetened shredded coconut
1/4 cup sweetened or unsweetened shredded coconut

1 tablespoon confectioners' sugar
1/4 teaspoon pure vanilla extract

Steps:

Steps:

  • Heat oven to 350.
  • Stir together flour & 3/4 Cup sugar. Cut in butter until crumbly. Save 1 cup mixture for topping later.
  • To remaining mixture add sour cream, egg, baking powder, baking soda and almond extract.
  • Beat medium speed until well mixed.
  • Spread batter over bottom and 2 inches up side of greased & floured 9" springform pan.
  • In small bowl combine 1/4 cup sugar, cream cheese and egg.
  • Beat at medium speed until smooth.
  • Spread mixture over batter to within 1/2 inch from edge.
  • Spread preserves over cream cheese mixture.
  • Sprinkle almonds and the 1 cup reserved crumb mixture over preserves.
  • Bke 45 - 60 minutes or until cream cheese filling is set and cake is a dark golden brown.

  • Equipment needed: Food Mill, so worth the investment. Recommended: OXO brand, easily found at Bed Bath & Beyond type stores. Cook potatoes and garlic cloves in salted water (about 1 tablespoon of kosher salt--not table salt) Drain the potatoes and garlic, and return the the pot on low heat-- this allows excess water to evaporate, about 2 to 3 minutes. Place potatoes and garlic into food mill, and using larges disk, turn handle to rice the potatoes back into your cooking pot. Add the cream cheese and allow to melt from the heat of the potatoes. Add the heavy cream (slightly warmed). Half & half works, but the heavy cream is what tastes best. Stir and taste; add more salt, if necessary. Cover and keep warm, on lowest heat, for up to 15 minutes-- or for longer time, keep warm in a low heated oven.

3 large egg yolks, beaten
2 Tbsp margarine or butter

2 tsp vanilla
1 baked pastry shell, 9-inch
1/2 tsp vanilla
1/4 tsp cream of tartar
1/3 c sugar
3 large egg whites (I usually use 4)

Steps:

  • 1. Let egg whites stand at room temp for 30 minutes.
  • 2. Meanwhile, combine 1/3 cup sugar, cornstarch, and salt.
  • 3. Stir in milk, cream of coconut and beaten egg yolks.
  • 4. Cook and stir over medium heat until mixture begins to thicken.
  • 5. Cook and stir for additional 2 minutes until thick and bubbly.
  • 6. Stir in margarine or butter until melted.
  • 7. Add 3/4 cup (less 2 Tbsp) coconut and 2 teaspoons vanilla.
  • 8. Pour hot filling into baked pie shell.
  • 9. Meringue: Beat egg whites, 1/2 tsp vanilla and 1/4 tsp cream of tartar on medium speed of electric mixture until soft peaks form.
  • 10. Gradually, add 1/3 cup sugar, 1 Tbsp at a time until stiff peaks form.
  • 11. Spread evenly over hot filling sealing the edge.
  • 12. Sprinkle with 2 Tbsp coconut.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch square cake pan.
  • Mix chocolate cake mix, water, vegetable oil, egg, and instant coffee together in a large bowl until well blended. Pour into the prepared cake pan.

  • 1. Bake single pie crust according to directions (or your favorite crust recipe) and cool.
  • 2. Mix flour and sugar in your sauce pan. Then add milk, coconut milk, heavy cream, butter, and salt. Slightly whip egg yolks until combined and add to other ingredients in pan. 16 large marshmallows
2 egg whites, room temperature

  • Spoon strawberry ice cream evenly into crust. Freeze 25 minutes. Spread vanilla ice cream over. Cover tightly and freeze until firm, about 1 hour. (Can be prepared 1 week ahead.)
  • Strain 2 tablespoons juice from strawberries. Stir marshmallows with juice in heavy small saucepan over low heat until melted. Cool completely.
  • Meanwhile, beat whites in medium bowl to soft peaks. Gradually add 1/4 cup sugar and salt and beat until stiff but not dry. Fold in cooled marshmallows. Spread over ice cream. 1 cup white chocolate chips
3 cups powdered sugar
1/4 cup butter or 1/4 cup margarine

Steps:

  • To make: Melt the chocolates together, stirring until smooth; remove from burner.
  • Blend in the 2 tbsp butter then Irish cream, beating until smooth.
  • When fudge is even, spread over and chill.
  • Spray a 8-inch square pan with cooking spray, setting aside for now.
  • In a saucepan, melt the chocolate and butter until soft the smooth.
  • You do NOT want to over-heat!
  • Stir mixture.
  • Combine the chocolate mixture with the sugar and cream.
  • Continue stirring until mixture is smooth.
  • Pour mixture into pan.
  • Smooth the top of fudge by laying piece of plastic wrap, pressing carefully and evenly.
  • Prepare the topping as noted above.
  • Evenly spread topping over fudge and chill for a few hours before cutting.

1/4 teaspoon salt

2 cups whole milk
3 egg yolks
1 tablespoon unsalted butter
1 teaspoon vanilla extract
2/3 cup semi-sweet chocolate chips
2 medium bananas, sliced
1 cup heavy cream
3 tablespoons sugar
1/2 teaspoon vanilla
Chocolate curls, for garnish (optional)

Steps:

  • Dump flour, cocoa, and sugar onto a clean countertop or pastry board. Cut butter into chunks and place on top. Flip chunks so they are coated. Press the butter into the flour with the heel of your non-dominant hand. With your pastry scraper in your dominant hand, scrape up some of the flour and butter and flip it over the pile. Press and scrape until you see more butter flakes than loose flour. Make a well in the middle of the pile & pour the water into it. Working quickly, use your finger tips to blend and distribute the water evenly into the dough. Then, scrape up the dough with your scraper and fold it over itself until you have a somewhat cohesive lump of dough. Collect into a ball, wrap tightly with plastic, and put in the fridge for about 30 minutes. Roll out dough and gently press into a 9" pie pan. Line crust with foil or parchment paper and fill with pie weights or dried beans. Bake at 350 degrees for 20 minutes. Remove weights and lining, then bake an additional 10-15 minutes until set. Allow to cool. --- Mix sugar, flour and salt in a medium saucepan. Stir in 1 cup of milk, mix until smooth, and bring to a boil over medium heat, stirring constantly. Continue to stir until smooth and thick, about 2 minutes, then remove from heat. Beat egg yolks with the remaining cup of milk. Temper the egg mixture with a small amount of the slightly cooled milk mixture then blend this into the larger saucepan with the cooling milk mixture. Return saucepan to the heat and bring to boil again, stirring constantly. Lower heat and simmer until mixture is the consistency of thick pudding, about 1 minute. Remove from heat and quickly stir in butter and vanilla. Add chocolate chips to filling & stir until melted and smooth. Cool for 5 minutes, then pour half into pie shell. Slice banana and place on filling, then add remaining filling. Refrigerate until cold. Whip cream, sugar, and vanilla; beat until cream holds peaks. Top with whipped cream.

  • You'll need a thermometer and ice cream maker for this recipe!
  • Combine all ingredients in a medium sauce pan and place on stove over a medium heat.
  • Bring the mixture to 170°F.
  • while stirring occasionally.
  • If you do not have a thermometer you can heat it to you see a bubble hit the surface of the mixture.
  • DO NOT ALLOW IT TO BOIL!
  • Remove from heat and cool slightly.
  • Place in airtight container and refrigerate overnight to allow flavors to meld.
  • If you're in a hurry you can place the pan in an ice bath.
  • Either way the temperature of the mixture will need to be at 40°F.
  • for most ice cream makers.
  • (This may not be necessary in a self contained freezer unit). Remove vanilla bean hull and freeze mix per manufacturers directions in your ice cream maker.
  • Wash and dry your bean hull, place it in 2 cups of sugar and in a few days you'll have vanilla sugar for your next batch of ice cream To firm up the ice cream place it in a lidded container in your freezer for an hour before serving.
