CORN SPOON BREAD
This recipe is from the kitchen of a Southern family friend. Corn Spoon Bread is more like a custard than bread and is soft enough to eat with a spoon. The finer the cornmeal, the creamier and smooth the texture will be.

DOUBLE CORN SPOON BREAD WITH GREEN CHILES

Steps:
- 1. Preheat oven to 350° . Butter an 8-inch-square baking pan with 1 tablespoon of the butter.
- 2. Place the chiles in a layer on the bottom of the pan, and sprinkle all but 2 tablespoons of the cheese on top of them.
- 3. Beat the egg whites until fluffy, but not stiff.
- 4. In another bowl, mix together the egg yolks, corn kernels, cornmeal, flour, milk, sour cream and salt. Fold the whites gently into the yolk-flour mixture. Spoon over the cheese and peppers.
- 5. Cut the remaining butter into small pieces and scatter over the top. Sprinkle the remaining cheese over all. Bake for 20-25 minutes, or until all but the very center is set. Serve hot.
Tips:
- Use fresh corn: Fresh corn gives the spoon bread the best flavor and texture. If you don't have fresh corn, you can use frozen or canned corn, but the flavor will be slightly less sweet.
- Don't overcook the corn: The corn should be cooked until it is tender but still has a slight crunch. Overcooked corn will make the spoon bread mushy.
- Use a good quality cornmeal: The cornmeal is the main ingredient in spoon bread, so it's important to use a good quality cornmeal. Look for a cornmeal that is finely ground and has a light yellow color.
- Season the spoon bread well: Spoon bread should be well-seasoned with salt, pepper, and other spices. You can also add cheese, bacon, or other ingredients to taste.
- Serve the spoon bread hot: Spoon bread is best served hot out of the oven. You can also reheat it in the oven or microwave, but it won't be as good as when it's fresh.
Conclusion:
Double Corn Spoon Bread with Green Chiles is a delicious and easy-to-make side dish that is perfect for any occasion. It's made with fresh corn, cornmeal, milk, eggs, and butter, and it's seasoned with salt, pepper, and green chiles. This spoon bread is light and fluffy, with a slightly sweet flavor. It's perfect for serving with roasted chicken, fried chicken, or pork chops.
