1 cup yellow enriched cornmeal, very fine

1/2 cup frozen corn, thawed

3 tablespoons olive oil

1 shallot, minced
1 tablespoon chopped fresh thyme
1 teaspoon baking powder

4 egg whites
1 tablespoon grated parmesan cheese

  • Preheat the oven to 375°F Lightly coat a 3 quart souffle dish with olive oil cooking spray.

3 eggs -- yolks and whites separated

2 Tbsp yellow cornmeal
2 Tbsp flour
1/3 c milk
2 Tbsp sour cream
1/2 tsp salt
