DOUBLE-CORN CORNBREAD

From America's Test Kitchen. I've had some cornbread that is almost cake-like and sweet. If that is what you're looking for, this is not it. This does have a very good, somewhat coarse texture. Perfect served up with your favorite chili! :) They recommended baking this in a cast-iron skillet, but I had very good results usimg a 9-inch round cake pan.

Categories     Bread     Bake     Quick & Easy     Hominy/Cornmeal/Masa

Yield 9 servings

Number Of Ingredients 9

1 cup stoneground yellow cornmeal
1 cup unbleached all purpose flour
1/3 cup organic sugar
2-1/2 tsp baking powder
1/4 tsp salt
1 cup buttermilk
6 tbsp unsalted butter, melted
1 extra large egg, lightly beaten
1/2 cup or more (up to 1 cup) fresh or frozen supersweet corn

Steps:

  • Preheat oven to 400 and lightly butter your skillet. Stir dry ingredients in a large bowl. Gently mix together buttermilk, butter, and egg and add to dry ingredients. Fold in the corn, and pour batter into prepared skillet. Bake on middle rack of oven for 25 minutes, or until edges are lightly browned and wooden pick inserted in center comes out clean. Cut into squares or wedges to serve.

Tips:

  • Use fresh corn: Fresh corn will give your cornbread the best flavor. If you don't have fresh corn, you can use frozen or canned corn, but the flavor will not be as good.
  • Use a variety of corn: This recipe uses both white and yellow cornmeal. You can use all of one type of cornmeal, or you can mix and match. Using a variety of cornmeal will give your cornbread a more complex flavor and texture.
  • Don't overmix the batter: Overmixing the batter will make your cornbread tough. Mix the batter just until the ingredients are combined.
  • Bake the cornbread in a hot oven: A hot oven will help the cornbread to rise and brown properly. Preheat your oven to the temperature specified in the recipe before you start baking the cornbread.
  • Let the cornbread cool before cutting it: Let the cornbread cool for at least 10 minutes before cutting it. This will help to prevent the cornbread from crumbling.

Conclusion:

This double corn cornbread is a delicious and easy-to-make recipe. It's perfect for a weeknight dinner or a potluck. The cornbread is moist and flavorful, and it has a slightly crispy crust. Serve it with your favorite soup or stew, or enjoy it on its own.
