Number Of Ingredients 12

7 ounces bittersweet chocolate, roughly chopped
1/3 cup butter
2 eggs
2/3 cup sugar
1/4 cup brown sugar
1/2 teaspoon vanilla
2/3 cup flour
1 tablespoon cocoa powder
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 cup bittersweet chocolate, roughly chopped
3/4 cup grilled nuts, roughly chopped (pecans, walnuts, cashews, macadam)

Steps:

  • Preheat oven at 350°F In a double-boiler, melt the first quantity of chocolate (7 ounce) and butter at low heat.
  • With a mixer, beat eggs, sugar and brown sugar for 2 minutes. Add vanilla and beat well.
  • Add melted chocolate and beat 1 minute.
  • Sift the dry ingredients. Add to the chocolate mixture. Add the chopped chocolate and nuts. Fold delicately.
  • On a baking sheet with parchment paper, put 2 tablespoon of mixture, leaving 1 1/2 inch between each cookies. Flatten lightly.
  • Bake in the third part of the oven 9 to 11 minutes. The sides will be crunchy and the center still soft. Don't cook the cookies too much because they will keep on cooking out of the oven, that way they will stay soft when cold. Let them cool a little bit before touching them, then cool completely on a rack.

DOUBLE CHOCOLATE NUT COOKIES

The original recipe has been changed to my liking. These cookies are nearly flourless. Wow!!!!! I officially have a new favorite cookie. I think I died and went to chocolate Heaven. No kidding!!! These cookies are a chunky triple chocolate delight. I would suggest making a double batch. They sure will tame a chocolate craving....

Time 30m

Number Of Ingredients 13

1/4 c flour
1/4 c unsweetened cocoa (i use ghirardelli )
1/2 tsp baking powder
1/4 tsp salt
8 oz 60% chocolate ( 2 bars 4 ounces each
6 Tbsp butter
1/4 c sugar
3/4 c light brown sugar
2 tsp vanilla
2 large eggs
3/4 c dark chocolate chips
1/2 c chopped pecans
1/2 c chopped walnuts

Steps:

  • 1. Heat oven to 350 degrees. In a bowl mix flour, baking powder, salt, and cocoa together. Set aside.
  • 2. Melt 8 ounces of chocolate and the butter over low heat together in large sauce pan continuously stir until smooth.
  • 3. Pour mixture into bowl to cool thoroughly. I cooled in fridge. After it cools, stir in sugar and vanilla until combined.
  • 4. Stir in eggs one at a time until blended. Stir in the flour mixture until combined. Batter will be brownie like and not thick.
  • 5. Stir in the chocolate chips and nuts. Refrigerate dough for 1-2 hours. Drop dough by heaping tablespoons on ungreased cookie sheet. I line my pans with parchment paper. Bake 15-17 minutes until set.
  • 6. Cool cookies Completely on pan. Do not remove while hot. Move to wire rack to cool thoroughly. Time to eat!

Tips:

  • Use high-quality chocolate chips for the best flavor.
  • Chill the dough for at least 30 minutes before baking to help the cookies hold their shape.
  • Bake the cookies until they are just set around the edges but still soft in the center. This will give them a chewy texture.
  • Let the cookies cool completely on a wire rack before storing them in an airtight container.
  • For a fun twist, try adding different nuts, such as walnuts, pecans, or almonds, to the cookies.
  • If you don't have a stand mixer, you can make the dough by hand. Just be sure to cream the butter and sugar together until they are light and fluffy.

Conclusion:

These double chocolate nut cookies are the perfect treat for any chocolate lover. They are soft, chewy, and packed with chocolate chips and walnuts. They are also easy to make, so they are perfect for busy weeknights or weekend baking. Whether you enjoy them as a snack, dessert, or gift, these cookies are sure to please everyone.
