1 cup mashed very ripe bananas (from about 3 medium bananas)

Steps:

  • Heat oven to 350°F. Grease 9x5-inch loaf pan.
  • In small bowl, mix oat flour, baking cocoa, xanthan gum, baking soda, baking powder and salt.
  • In large bowl, beat butter and sugar with electric mixer on medium speed 3 to 5 minutes, scraping bowl occasionally, until fluffy. Beat in eggs, one at a time, just until smooth. Beat in bananas, buttermilk and vanilla. Stir in oat flour mixture and chocolate chips. Pour into pan.

1 ripe banana, mashed
½ cup semisweet chocolate chips
1 cup confectioners' sugar
2 tablespoons butter, melted
2 teaspoons heavy whipping cream

3 Tbsp apple sauce
1/4 c skim milk

1 c all purpose flour
1 tsp baking soda
1/4 tsp salt
2 Tbsp cocoa
1/2 c soft, unsalted butter
1/2 c sugar
1 large egg
1 tsp vanilla extract
1 c mashed banana (about 2 medium bananas)
1/2 c sour cream or buttermilk
1 c semi sweet chocolate chips, mini preferred

Steps:

  • 1. Preheat the oven to 350 degrees. Lightly grease two 3 1/4 x 5 3/4 inch mini loaf pans, or one 9x5 inch loaf pan.
  • 2. Combine the flour, baking soda, salt, and cocoa.
  • 3. In a separate bowl, beat the butter and sugar until light and creamy.
