- Preheat oven to 350 degrees.
- In a large skillet, brown beef and chopped onion in olive oil. Drain off fat and discard.
- Add tomato sauce, sugar, salt, garlic powder and black pepper, mix then remove from heat. Set aside.
- Cook egg noodles to just under al dente. Drain and set aside.
- While noodles are cooking, in a large bowl mix cottage cheese, cream cheese, sour cream, scallions and bell pepper. Mix to combine.
- In a 2-quart rectangular casserole dish (ours was 11x7x1½ inches in size), spread half the noodles. Top with half the beef sauce. Cover with all of the cheese mixture. Cover with remaining noodles and remaining beef sauce then top with Parmesan cheese.
- Bake uncovered for 30 minutes and serve.

- 1. Cook the noodles as directed on the package or to your tenderness and than drain.
- 2. While the noodles are cooking, cook and stir the meat and the onion in a large skillet until the meat is brown.
- 3. Drain off the excess fat.
- 4. Mix together in a bowl the hamburger,noodles tomato sauce, salt, cream cheese, cottage cheese and the sour cream. (Note you might want to blend up the cream cheese, which would be easier to mix with)
- 5. Pour into a covered baking dish and bake in a 350 degree oven until hot, about 30 minutes or a little long depending on your oven.
- 6. The last 10 minutes sprinkle Monterey Jack cheese over the top.
