Double Blueberry Pie With Pat In The Pan Crust image

This recipe is from a Mr. Food TV episode from the 1990's. It uses both blueberry pie filling and fresh blueberries, making the filling especially good, and yet easy.

PAT IN PAN CRUST:
3 c all purpose flour
1 c sugar
1 tsp salt
1 c cold butter
BLUEBERRY FILLING:
2 can(s) (21 ounces each) blueberry pie filling
1 pt fresh blueberries
1/4 tsp cinnamon

Using your fingers pat pastry into an evenly thick crust on bottom and sides of pie plate.
  • 2. FILLING: Mix pie filling, fresh blueberries, and cinnamon. Pour into pie shell. Sprinkle remaining pastry crumbs evenly over blueberry filling. Bake for 45-50 minutes or until crumbs are golden brown and filling is bubbling.

DOUBLE-GOOD BLUEBERRY PIE

Number Of Ingredients 7

3/4 cup sugar
3 tbs. cornstarch
1 tbs. lime juice (recipe says lemon, but I love lime)
1/4 cup water
4 cups blueberries
1 tbs.butter
1/8 tsp. salt

Steps:

  • Combine sugar, cornstarch, and salt in saucepan. Add water and 2 cups blueberries, stirring constantly until the mix comes to a boil and is thickened and clear. Remove from heat and stir in butter and lime/lemon juice. Having prepared/purchased a 2-crust pie crust, add 2 cups of uncooked blueberries. Pour cooked blueberry mix on top. Add the second crust and vent. Bake 425 degrees for 40-50 minutes. When you see the crust is lightly browned and has juice bubbles coming through the steam vent, it is done.

Tips:

  • For a golden-brown crust, brush the pie crust with milk before baking.
  • If you don't have pie weights, use dried beans or rice to weigh down the pie crust during pre-baking.
  • To prevent the pie crust from getting soggy, pre-bake it for 10-12 minutes before filling it.
  • Use a combination of fresh and frozen blueberries for the best flavor.
  • If you don't have lemon juice, you can use vinegar instead.
  • Let the pie cool completely before slicing and serving.

Conclusion:

This double blueberry pie is the perfect summer dessert. It's made with fresh and frozen blueberries, and it has a delicious buttery crust. The pie is easy to make, and it's sure to be a hit with your family and friends. So next time you're looking for a delicious and easy dessert, give this double blueberry pie a try!
