For most of us who grew up snacking on the beloved Nacho Cheese or Cool Ranch flavors, we didn't always make the connection that these seasoned chips were akin to the chips we love with salsa. But it's this similarity that makes Doritos a reasonable ingredient for a corn tortilla-style casserole.Our Doritos Casserole takes the familiar base of cooked onion, garlic, and ground beef and seasons it with a packet of taco seasoning. We mix in a can of diced fire-roasted tomatoes for both acidity and smokiness. A can of chopped green chiles adds some flavor and spice, and a can of cream of chicken soup dissolves into the remaining ingredients to give a rich and savory quality to the mixture. We layer this mixture with crushed Doritos and cheddar cheese, and as the casserole bakes, the Doritos soften just a bit from the moisture in the meat. Easy to slice and serve with some fresh cilantro, the rich flavor of our Doritos Casserole will surprise you just as much as the people you're serving.

2 tablespoons vegetable oil
1 yellow onion, finely chopped
2 cloves garlic, thinly sliced
1 pound ground beef
1 package taco seasoning
1 (14.5-oz.) can diced fire-roasted tomatoes
1 (4.25-oz.) can chopped green chiles
1 (15-oz.) can cream of chicken soup
1 (9.75-oz.) bag Doritos Nacho Cheese Flavored Tortilla Chips
1 1/3 cups shredded cheddar cheese, divided
Fresh cilantro to garnish, optional

Steps:

  • Heat vegetable oil in a large skillet over medium-high. Add onion and sauté until softened and translucent, about 6 minutes. Add garlic and cook for 1 minute. Add beef and break up with a spoon; cook until completely browned. Add taco seasoning and stir to incorporate. Mix in tomatoes, green chiles, and cream of chicken, and stir occasionally over medium-high until liquid thickens, about 5 minutes. Remove from heat.
  • Transfer chips from the Doritos bag to a large bowl. Use your hands to break up the chips until the pieces are small but not quite crumbs.
  • Preheat oven to 350°F. Pour one-third of the meat mixture in the bottom of a 9- x- 13-inch baking dish. Sprinkle 1/3 cup shredded cheese over the layer of meat. Sprinkle half of the crushed Doritos evenly on top of the shredded cheese. Pour another third of the meat mixture on top of this Dorito layer and spread evenly over the chips. Repeat the layering process with another 1/3 cup cheese and remaining Doritos. Pour remaining meat mixture over top and spread evenly. Sprinkle remaining 2/3 cup shredded cheese on top. Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the aluminum foil and bake until the cheese begins to brown, about 20 minutes.
  • Allow to cool slightly before serving with fresh cilantro to garnish.

14 ounce "party size" bag of Nacho Cheese Doritos
1½-2 pounds ground beef
1 10¾ ounce can of cheddar cheese soup
1 10¾ ounce can of cream of chicken soup
1 12 ounce can of evaporated milk
1 4 ounce small can of diced green chilies
2-3 cups shredded Mexican cheese
1 packet Taco seasoning (optional)
Sour cream
Diced green onion
Sliced cherry tomatoes
Sliced Avocado or guacamole
Salsa

Steps:

  • Pre-heat oven to 350°
  • In a large pan, brown the ground beef and then drain the fat. If you plan to season the meat with taco seasoning, now's the time to do it:)
  • Add the 2 soups, evaporated milk, and diced green chilies to the ground beef
  • Cook while stirring over medium heat until it is bubbly
  • Prepare a baking dish with non-stick spray
  • Add 1/2 the bag of chips to the bottom of the baking dish. Crumble them a little bit as pictured (not too much!)
  • Scoop 1/2 of the meat mixture over the chips
  • Add a layer of 1 cup of shredded cheese on top. Add additional cheese if needed or desired.
  • Repeat the layers of chips, meat, and cheese with the remaining ingredients
  • Bake for about 20 minutes or until the cheese is melted and everything is heated through

Got this recipe from a friend WAY back in junior high. Super simple and tastes delicious. My kids ask for it all the time. If you love enchiladas, you'll love this recipe. You can use any flavor Doritos® to suit your tastes. When reheating leftover casserole, stir in a little bit of milk to make it creamy again.

1 (10.75 ounce) can cream of chicken soup
1 (10 ounce) can enchilada sauce
10 fluid ounces milk
1 (13 ounce) package flavored tortilla snack chips (such as Doritos®), crushed
8 slices processed cheese food (such as Velveeta®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir ground beef in a large pot over medium-high heat until the beef is crumbly and completely browned, 7 to 10 minutes. Drain and discard excess grease.
  • Stir cream of chicken soup, enchilada sauce, and milk with the ground beef; bring to a simmer and cook for 5 minutes.

Found this recipe, but since I altered it I am writing my alterations. Making it for the 1st time 4-15-21. Smells really good! Although hubby says I am a wimp because I don't like pepper jack cheese...so that was one of the alterations! LOL

1 lb chopped rotisserie chicken (chopped more), walmart
8 oz sour cream
1 can(s) cream of chicken soup
2 slice yellow onion, diced
11 oz can corn, drained well
1 c shredded pepper jack cheese
2 c shredded cheddar cheese
1 spoon of minced refrigerated garlic (used spoon from my silverware drawer)
fresh ground black pepper to taste, i used about 4 grinds
1/2 tsp grill mates roasted garlic and herb (cause hubby seems to not know what poultry seasoning it...lol)
9 1/4 oz bag doritos, crushed to make 3 cups (eat the leftovers)
sour cream, optional
shredded lettuce, optional
guacamole, optional
chopped tomato, optional

Steps:

  • 1. Combine chicken, sour cream, soup, onion, corn, 1 c each cheese, garlic, pepper, poultry seasoning, mix well. Spray 9x13 with PAM. Put evenly into bottom, top with remaining 1 c cheddar, and crushed doritos. Bake at 350 degrees, 25 min, or until bubbly, then let rest 5-10 min and serve. I like my mexican style things to have additional sour cream, guacamole, and shredded lettuce. Hubby likes chopped up tomatoes.
