This is a delicious, easy way to grill fish....another family favorite! An Asian-style marinade goes perfectly with swordfish.

3 tablespoons soy sauce
½ cup vegetable oil
2 tablespoons sherry
1 teaspoon grated fresh ginger root
2 cloves garlic, peeled and minced
4 (6 ounce) swordfish steaks

Steps:

  • Whisk together soy sauce, vegetable oil, sherry, ginger root, and garlic in a medium bowl. Fill a large resealable bag with the mixture. Place swordfish steaks into the bag and shake to coat. Place bag in the refrigerator, and allow the steaks to marinate, at least 4 hours.
  • Preheat an outdoor grill for high heat and lightly oil grate.
  • Grill swordfish steaks until the they flake easily and are opaque in the center, 8 to 10 minutes per side.

GRANDMA DOREEN'S FLANK STEAK

1 flank steak (any size)
2 tablespoons sesame oil
Red pepper flakes, to taste
4 cloves fresh garlic, finely chopped
Two 1 1/2-inch pieces fresh ginger, peeled and sliced as thinly as possible
1 cup dry red wine
1/4 cup soy sauce
2 tablespoons honey

Steps:

  • In a shallow non-reactive dish spread 2 garlic cloves and half the ginger slices so that all parts of the meat will come in contact with them. Rub the meat with the sesame oil and red pepper flakes and place the steak onto the garlic and ginger. Spread the remaining garlic and ginger over the meat and pour the red wine, soy sauce, and 2 tablespoons of honey into the dish. Cover with plastic warp and marinate for 2 hours or overnight. Turn the meat once during marinating.
  • Heat a barbecue or grill. Cook the meat for 5 to 7 minutes on each side depending on the thickness of the meat. This may also be cooked under the broiler or, on the stove if you have a large enough skillet. The marinade can be used by bringing it to a boil in a saucepan and then straining.
  • After removing it from the heat, let the flank steak sit for a few minutes, then slice thinly against the grain and serve in its own juices with cooked marinade sauce drizzled on top.

This recipe is from Taste of Home and it's the most wonderful marinade for venison that I've ever tried! It's great with venison steaks and tenderloins, but I'm sure it would be fabulous with beef also. I get better results if I grill my steaks rather than broil, but that's just me. It's the only way I've been able to keep venison steaks tender and juicy - you won't be disappointed either! I often double the marinade recipe so that I have plenty for marinating, basting and for serving. I have not included the marinating time in the prep time, but it's best if marinated overnight.

6 (4 ounce) boneless venison steak or 2 venison tenderloins (or any other red meat)
1/2 cup white vinegar
1/2 cup ketchup
1/4 cup vegetable oil
1/4 cup Worcestershire sauce
4 cloves garlic, minced
1 1/2 teaspoons ground mustard
1/2 teaspoon salt (Kosher is best)
1/2 teaspoon pepper

Steps:

  • Place venison in a large Ziploc bag.
  • In a bowl, combine all of the remaining ingredients.
  • Pour half over the venison; seal bag and turn to coat.
  • Refrigerate overnight.
  • Refrigerate remaining marinade.
  • Drain and discard marinade from the steaks.
  • Broil steaks 3-4 inches from the heat for 4 minutes.
  • Turn; baste with reserved marinade.
  • Broil 4 minutes longer.
  • Alternatively, grill steaks on a gas grill over high heat for 3 1/2 to 4 minutes a side, basting often.
  • I prefer to grill venison to medium-rare at most so that it remains tender.
  • Serve steaks with more of the reserved marinade.
  • YUMMY!

  • Use a sharp knife to score the steak against the grain. This will help the marinade penetrate the meat more easily.
  • Don't over-marinate the steak. 24 hours is the maximum amount of time you should marinate the steak, or it will start to break down.
  • Bring the steak to room temperature before cooking. This will help it cook evenly.
  • Cook the steak over high heat to sear the outside and keep the inside juicy.
  • Let the steak rest for a few minutes before slicing and serving. This will help the juices redistribute throughout the meat.
